Mutton biryani

For mutton marination: INGREDIENTS n Mutton: 1/2 kg For garam masala: n Ginger-garlic paste: 2-3 tsp n Cinnamon stick: 1 n Turmeric: 1 tsp n Cloves: 8-10 n Chilli powder: 1 tsp n Cumin seeds: 2-3 tsp n Cashew nut paste n Fennel seeds: 1 tsp n A pinch of garam masala n Coriander seeds: 2-3 tsp n Curd: 4-5 tsp n Pepper corns: 1 tsp n Star anise: 2 PROCEDURE n Mace Dry roast all the spices. Once they are roasted, transfer them to a Prawn Biriyani n Brown cardamom: 2-3 masala grinder and grind them finely. Now marinate mutton. Meanwhile, in another medium wide saucepan, spread the remaining half tablespoon of oil on the bottom n Prawns ( cleaned and of the pan. Cover the pot with the lid n Mint leaves: 1/2 cup and cook the layered rice on high flame for about 10 min- utes. Do not open the lid while cooking. Reduce the flame n Salt according to taste and cook the biryani for about 20 minutes. Turn off the heat and remove the lid after 15 minutes of resting time. Combine the biryani well in such a way that the masalas and rice is well combined. Do not stir hard as rice might break.
