17 Assyrian Recipe Editor's Note: This recipe was prepared by Mrs. Martha J. Petros of Chicago several years ago. Kada is KADA an Assyrian pastry, generally prepared during Christ- mas and Easter. It is eaten with tea or coffee for (Holiday Pastry) breakfast, afternoon or evening snacks. Of the Middle Eastern people, no one but the Assyrians make Kada. It originated in Urmia, Iran where thousands of Filling: Assyrians livedfor several centuries during and subse- 2 pounds butter quent to the Assyrian Empire. The area around Lake 8 cups flour (about 2 pounds) I teaspoon salt Urrnia was originally used by the well-to-do and the Dough: nobility of the Assyrians as a vacation site. The soil is 5 pounds flour so fertile that many took to agriculture, orchards, I tablespoon salt vineyards, etc. I pound butter 7 eggs I cup sugar 4 cups milk I large cake compressed yeast F or filling, allow butter to boil over medium heat for FOR YOUR about 15 minutes. Let stand for 5 minutes, then strain INSURANCE NEEDS to render clear. Pour into a large saucepan, add the 8 cups of flour and salt. Mix thoroughly. Cook over low heat for about one hour, stirring occasionally to avoid • Life • Health burning. Separate into seven portions and allow to cool to lukewarm. · Mortgage .
