4 Home Cooking Old Fashioned Golden Syrup Dumplings. courtesy of Australian Home Cooks

INGREDIENTS 2 1/4 cups water 1 1/4 cups self raising flour 1/3 cup lightly packed brown sugar 40g butter, extra, chilled, chopped 1/3 cup caster sugar 1/4 cup milk 1/3 cup golden syrup 1 egg yolk 1/4 cup fresh lemon juice Ice cream – to serve 30g butter

METHOD 1. Place the water, combined sugars, golden syrup, lemon juice and butter in a large saucepan over low heat and stir until the sugar dissolves and the butter melts. Increase heat to medium–high, bring to the boil. Simmer for 5 minutes. 2. Meanwhile, place flour in a bowl. Use your fingertips to rub the extra butter into the flour until the mixture resembles fine breadcrumbs. 3. Whisk the milk and egg together in a small bowl. Add to the flour mixture and use a round-bladed knife in a cutting motion to mix until the mixture starts to come together. Use your hands to bring the dough together in the bowl. 4. Divide the dough into 12 equal portions and roll each portion into a ball. 5. Add the dumplings to a baking dish and pour over the golden syrup mixture and cover. Place covered in a preheated oven at 170°C for 25-30 minutes or until a skewer inserted into the centre comes out clean. 6. Divide the dumplings and syrup among serving bowls. Serve with ice-cream.

Common Composition Rules - Negative Space Sometimes, less is best! Simplicity in photography, at times tells the better story. We may be tempted into trying to capture ‘everything’ that the eye sees, within a photograph. Take the photograph below. If other boats that were moored nearby were included within this photograph, it would somehow detract from the real subject. This boat started moving from its mooring and as it happened that morning, it was foggy. As the boat moved further away, the fog started to envelop it until it had completely disappeared. The subject of this photograph is obviously the boat while the rest of the photograph is all that surrounds it. Hence the term ‘negative space’. In this case, the ‘white space’ or ‘negative space’ is everything that is not the boat, hence the positive space is the subject of the photograph. Whenever you may be faced with a simple composition with one main subject and a lot of empty space, use your imagination as to how you can make a photograph out of it. Next issue: Symmetry

Heath, Glenn and Kathy braved the weather and selected a safe area to fish the rocks and they also fished in the beach section. 19 BAY & BASIN COMMUNITY RESOURCES (BBCR) BBCR celebrates 30 years of National Volunteer Week Volunteers “Making a world of difference” “Oh, What a Night”...... Over sixty BBCR volunteers & their partners were treated to a wonderful 2019 Volunteer recognition dinner. The attention to detail was second to none with beautifully laid out tables, floral table decorations, delicious Chef prepared cuisine and the BBCR Volunteer “Pirates band” playing classic pop music creating the mood. BBCR turned the St Georges Basin Community Hall into a classy restaurant. Volunteers guests were welcomed and presented with a 2019 Volunteer Week pin and personalised certificates as a memento of the evening. There was much to celebrate with several volunteers having completed 5, 10 and 15 years’ service. All were called up, thanked and presented with awards by BBCR Board Members. BBCR Volunteer Board President Dave Reynolds words addressed the question “why some people volunteer, and some don’t” and concluded that volunteers are driven to make their community better and BBCR volunteers are the backbone of not only the organisation, but the community. BBCR’s CEO, Sue Clifton has often said “This organisation was built on a vibrant and dedicated volunteer base” One of the most touching parts of the evening was when CEO Sue Clifton rather than adding to David’s fine words decided to take the microphone to BBCR’s quiet achievers and ask the volunteers who work in many parts of BBCR’s organisations programs to talk about their BBCR experience. They spoke about their driving passions, commitment and wanting to make things better for their community and how BBCR allows them to channel these desires to make a difference. Competing against schools in our local area, our knockout teams have proved to be quite successful. Students gain so much more than just physical fitness when they are part of a team. They build resilience, persistence, develop their communication skills, make lasting friendships and strengthen their relationships with coaching teachers.
