Low Calorie Dressings

Bottled dressings can contain excessive calories and be costly. Try out some of these homemade dressings to dress or to use as dips with sliced vegetables. If no directions are provided, simply combine all the ingredients in a glass jar with a tight fitting lid and shake vigorously. With all of these recipes, shake well before serving and store leftover dressing in the refrigerator in a container with a tight fitting lid. Dressings will keep in the fridge for up to one week.

Dijon -Dill Sauce Caesar Dressing 3 T Dijon style mustard 1 clove garlic, crushed 2 T fresh dill ⅓ cup low-fat cottage cheese 1 to 2 T sugar ½ cup nonfat plain yogurt 2 T fresh lemon juice ¼ cup freshly grated Parmesan cheese salt and pepper to taste 5 t white-wine pinch of cardamom ½ t 1/2 cup canola oil salt and pepper to taste Whisk together the ingredients, except the oil, Puree garlic and cottage cheese in a blender or until smooth. Gradually add the oil, whisking food processor until smooth. Add remaining constantly, until blended and smooth. ingredients and pulse to blend. Cover and let stand for 2 to 3 hours before serving to let the flavors develop. Honey Mustard Dressing ¾ cup rice wine vinegar French Dressing 2 T honey ¼ cup 2 T hot mustard ½ cup red wine vinegar 1 T canola oil 2 T fresh parsley, chopped dash of salt 2 t Dijon mustard black pepper to taste 1 t garlic clove, minced ¼ t salt French Dressing black pepper to taste 1 cup canola oil 1 cup sugar Italian Herb Dressing ¼ cup white vinegar ¾ cup 1 cup ketchup 3 tablespoons olive oil ¼ teaspoon garlic powder 1 tablespoon dried basil Place the oil and sugar together in a blender jar; 1 tablespoon ground oregano blend until creamy. Add vinegar, ketchup, and 3 tablespoons thyme garlic powder. Blend again until well mixed. Salt and pepper to taste
