University of Missouri Extension 4-H programs are available to all without discrimination. What am I doing during COVID-19

Megan Rice, member of Manila 4-H has been working on making a quilt during this stay at home time. She has also purchased 2 pigs and has been taking care of them. Unfortunately she learned that viruses can attack livestock as well and lost one of her first pigs. She got a replacement and both are loving the attention they get.

Kaley and Ava Burkhalter enjoy raising and showing pigs for 4-H. This year they have Birkshire and a Cross. They have had a hard time keeping the pigs healthy with the way the weather has been so they are learning a little more about medication and dosage. Kaley enjoys everything there is to do with taking care of her animals. She is constantly out with them doing things, making sure they have enough food, checking to make sure the waterer is still working, and giving lots of belly rubs. Ava enjoys walking them, talking to them, and giving belly rubs.

What am I doing during COVID-19

Eli Dehan, reporter for Dresden 4-H Club, tells me that for their April service project, members took turns dropping off supplies of bleach, newspaper, cat/dog toys, bedding, etc. to the Sedalia Animal Shelter. Club members continue to work at home on their projects. Austin Wood has already turned in his Horse papers, pre- paring him for the Pettis County 4-H/FFA Horse Show held in June. In the horse picture we have Austin’s, 2 year old brother, Robby practicing for Lead Line. For May, the Club will meet by ZOOM on Sunday, May 3 at 5:00 p.m.

We had a Zoom meeting for Entrepreneurship on April 21, 2020. All members attended the virtual meeting. We have 2 new members, Payton and Taylor Lund. We talked about time management skills and practiced our 1 minute sales pitches for our businesses.

You know those banners hanging in the 4-H Building on the fair grounds. They are going to be changing them. And we get to design our own. I have a template in PP format that needs to be filled in. Think 30 inches by 60 inches. Deadline to Sherol by: September 30, 2020. We can vote in October during 4-H week and then play with the design until December. I need to turn the fin- ished product in before February 1st, 2021

State Fair County Banners Construction Instructions Missouri will celebrate its Bicentennial in 2021. One way Missouri 4-H will join the celebration will be with up- dated county banners for the 4-H Building at the Missouri State Fair. Any county that does not submit their own banner will be represented by a generic 4-H banner. The old banners will be returned to the counties. Please follow the guidelines given below when designing the county banner. 1. A PowerPoint template can be found in the Missouri 4-H Marketing Box Folder. Please save a copy of this tem- plate to your computer before starting your design. Do not modify the size or orientation of the slide. Banners should be one-sided.

2. The design selected for the banner should represent your county’s heritage or “Claim to Fame”, or should be symbolic of the 4-H or Extension programs. We encourage you to have some kind of contest or event that involves many people contributing their ideas to the design. Remember, the banners will be in the building for years, so the design should be “timeless.”

3. The design used on the flag must include the name of the county. The name can be placed at any location on the flag that contributes to the overall attractiveness of the flag. Letters for the county name should be in a minimum font size of 216. There is no maximum letter size; the design will determine this. The county name should be read- able from a distance of 30 feet. Do not include club names on the banner. Refer to the 4-H Branding Toolkit on the Missouri 4-H website for the correct logos and color palette.

4. Photos and graphics should be of high resolution to ensure a decent print quality.

Newsletter Project —International Foods

As the Countywide International Foods Project Leader, I thought we would get started. If you are signed up for International Foods, this is how it will work this year. If you are not signed up let me know and I will add the project for you in 4-HOnline. There are 5 Fridays in May, I will give you 5 recipes this month and you will need to prepare them (with Adult Supervision). Parents these recipes are side dishes or desserts. Take a picture of the finished dish, write a paragraph about the recipe. How does it taste, was it hard or easy to prepare, would you make it again type things. Send your image and paragraph to me at [email protected] before the next Friday. Last one due will be Friday, June 5th, 2020 I will sign a project record and e-mail it back to you for you to finish filling out. I have to receive 5 pictures and 5paragraphs for you to complete this project. Sound fair enough?

Remember: 4-Hers at least taste the food.

Switzerland - May 1, 2020

Rösti is a potato dish made by frying (or occasionally baking) flat round patties of coarsely grated raw or parboiled (semi-cooked), seasoned potato in oil. They’re crisp on the outside and soft and melting inside. Sometimes bacon, onion, cheese – and even apple – are added to the mix. It’s eaten as a side dish to accompany fried eggs and spin- ach or a sausage meat called fleischkäse. It was originally eaten as a breakfast by Bern farmers but these days you’ll find it enjoyed all over the world as well as in Switzerland where it’s considered a national dish.

4 Tablespoons Butter 1 Teaspoon Salt 2 1/4 pounds Potatoes 2 3/4 Cups Water

1. Wash the potatoes, boil them in salted water and then peel them. Let cool completely, ideally over- night. Then grate the chilled potatoes with a grater. 2. Mix the potatoes and salt in a bowl. 3. Next, heat the butter in a pan and add the potato mixture and press to a cake. 4. Let it roast until the bottom side is crispy brown. Turn the browned potatoes by sliding them onto a plate and sliding them back into the pan on the other side. Fry the second side until crispy. 5. Serve hot.

Columbia (not Missouri) - May 8, 2020

Papas Chorreadas (Potatoes with Cream and Cheese Sauce) Papas Chorreadas is a typical Colombian side dish, born in the Andean zone of the country, these creamy pota- toes are delicious with meat dishes. And they are a must as a side dish for Sobrebarriga al Horno.

8 medium red potatoes, partially peeled ¼ teaspoon garlic powder 1 chicken bouillon cube ¼ teaspoon cumin Water ¼ teaspoon salt 1 tablespoon butter Pepper to taste 1 tablespoon vegetable oil 1 cup heavy whipping cream 1 ½ cups dice tomatoes 1 tablespoon chopped cilantro 3 scallions cut into 2 inches long 1 cup shredded mozzarella cheese

1. Place the potatoes and chicken bouillon in a medium saucepan. Cover with water and bring to a boil and cook about 30 minutes until tender. Drain and set a side. 2. While the potatoes are cooking, heat the oil and butter in a frying pan over medium heat. Add onion and to- matoes, stir and cook about 7 minutes. Add garlic powder, cumin, salt and pepper. Stir and cook 2 minutes more. 3. Add cream, cilantro and cheese. Mix well and turn down the heat and cook for 3 minutes or until cheese has melted. In a serving dish place the potatoes and pour the sauce on top. Serve them hot.

Korea - May 15, 2020

Corn Cheese It’s loaded with cheese and coated with butter, so it’s very savory and smells warm and heavenly! It also has a sweet note at the same time, so it gives a more complex flavor. It's like eating Korean pizza toppings without a pizza base, because most Korean pizza is covered with sweet corn!

1 1/2 cups sweet corn kernels, canned, water drained Sauce: 1 1/4 ounces colored bell peppers, diced 2 1/2 Tbsp mayonnaise 1 Tablespoon butter 1/2 Tbsp sugar (I used raw sugar) 1 cup shredded mozzarella cheese A few sprinkles fine sea salt A few sprinkles parsley flakes A few sprinkles ground black pepper

Combine the sweet corn, bell peppers and the seasoning sauce in a bowl and mix them well. Preheat a skillet over medium high heat. Add the butter and melt it. Reduce the heat to low, add the seasoned sweet corn and bell pepper mixture (from step 1) and gently spread it around the skillet. Sprinkle around the cheese and parsley flakes on top of the corn mixture and cover. Cook it further on the stove until the cheese is melted (4 to 5 mins). Alternatively, you can cook it in the oven (220 C / 428 F) until the cheese is melted (about 5 mins). Use the broiler / grill if you want to brown the cheese.

Indonesia - May 22, 2020 Pineapple Rolls – amazing pastry filled with pineapple jam, a must-have for Lunar New Year in Southeast Asia!

Pineapple Roll Cake (Bahulu Gulung)

For Pineapple Jam For Roll Cake 1 pineapple (skin, crown, eyes and core removed) 9 large eggs 3/4 Cups baking (Castor) sugar (fine sugar) 1 1/3 Cups sugar 2 1/4 Cups plain flour 1 Teaspoon vanilla extract

To Make the Pineapple Jam Grate the pineapple into a thick and coarse pulp. Place the pineapple pulp and sugar into a large saucepan. Bring to the boil, then lower the heat to medium. Cook the jam until it thickens to a spreadable consistency, stirring occasionally. Set aside to cool.

To Make the Roll Cake Preheat oven to 180°C/355F. Grease and line a 9 inch square cake tin. Beat the eggs and sugar with an electric mixer until fluffy. Add the vanilla extract and sift in the flour. Fold through gently with a rubber spatula. Pour the batter into the cake tin. Bake for 12 mins. Remove the cake from tin immediately, then spread the pineapple jam on top. Carefully roll the cake and allow to cool seam side down. Allow to cool completely before slicing to serve. Australia - May 29, 2020 Damper is often made on camping trips but this easy damper recipe for kids can be whipped up in your own kitchen with minimum fuss and maximum good fun. Simply sift flour and salt into a bowl, rub in butter until the mixture resembles fine crumbs then make a well to add milk and water.

3 cups self-raising flour 1/2 tsp salt, optional 3 tbsp butter 1/2 cup milk 1/2 cup water

Preheat oven to 400°. Sift flour and salt into a bowl, rub in butter until mixture resembles fine crumbs. Make a well in the center, add the combined milk and water, mix lightly with a knife until dough leaves sides of bowl. Gently knead on a lightly floured surface and then shape into a round, put on a greased oven tray. Pat into a round 5-7 inch diameter. With sharp knife, cut two slits across dough like a cross, approximately 1cm deep. Brush top of dough with milk. Sift a little extra flour over dough. Bake for 10 minutes, or until golden brown. Reduce heat to 325° and bake another 20 minutes or until cake tester/toothpick comes out clean. Drawings will be conducted for each Monday and each Thursday. Two firearm winners will be drawn for each week starting Aug. 3, 2020 until all 104 prizes/firearms have been drawn.

Winners will be notified by email, phone and/or USPS mail.

You must be 21 years of age to enter.

All federal, state and local laws/regulations must be met prior to transferring any firearm. If the win- ner cannot pass the background check they will be given a $100 gift certificate.

All prizes/firearms must be claimed and picked up within 45 days after notification of winning at Black Market Arms, Auxvasse, MO. Any firearm that is not picked up within the 45 days (unless other arrangements have been made and agreed upon) will revert back to the Missouri FNRA program. Dealer is subject to change.

No refunds will be offered on purchased calendars.

Winners must accept the prize/firearm as drawn.

If a particular firearm is not available as drawn an equal value prize/firearm will be substituted. This is at the discretion of the FNRA Committee.
