Plating 2 Story of “DALGONA” “DALGONA” is Korean soul food usually sold in front of Korean elementary schools or on the streets. DALGONA sellers are usually older men, and they sell it for around 500 won which is equivalent to 50 cents in each. From a long time ago, DALGONA always has been on the streets with crowded kids. They enjoy the process of making DALGONA which looks magical(because white sugar is inflated by baking soda in short time) to young kids. 3 Story of “HOTTEOK” “HOTTEOK” used to be one of the most beloved winter street snacks in Korea. It is crispy on the outside but the inside is made with white sugar(syrupy) for sweetness. HOTTEOK vendors are usually at markets and on the streets in winter. 4 Making of dish • Inspired by pancakes with fruits, maple syrup, and sugar powder. • It could replace meat like “Seitan(vegetarian meat made by wheat gluten)” does. – DIRACs Flour Dough is replaced by gluten flour, cornstarch, baking soda, salt, simple syrup and water. Maple syrup(on top) is replaced by brown sugar, water, xanthan gum, and smoked by maple wood chips. Fruits are replaced by diluted water, sodium alginate, iqemusu(strawberry flavor oil), white sugar, xanthan gum, and food color. 5 About SEITAN • Wheat gluten is made from gluten, the main protein of wheat. It is made by washing wheat flour dough with water until all the starch granules have been removed, leaving the sticky insoluble gluten as an elastic mass which is then cooked before being eaten. • The name Seitan is now widely used in vegetarian, vegan, wholefood and macrobiotic circles for wheat gluten dishes. • Wheat gluten is an alternative to soybean-based foods such as tofu, which are sometimes used as meat substitutes. Some types of wheat gluten have a chewy or stringy texture that resembles meat more than other substitutes. Wheat gluten is often used instead of mean in Asian, vegetarian, Buddhist, and macrobiotic cuisines. Mock duck is a common use for wheat gluten. • In Korea, we call it “milgogi”. 6 Ingredients of DALGONA <Ingredients> <Tools> White sugar 30g Baking soda 1g 7 Ingredients of HOTTEOK <Dough> < Maple smoked syrup> • Gluten flour 25g Brown sugar 150g • Cornstarch 20g Water 125g • Baking soda 1g Xanthan gum 1g • Salt 1g Maple wood 20g • Corn oil 17g • Water 25g • White sugar 13g • Brown sugar simple syrup 15g 8 Ingredients of HOTTEOK 9 Method of DALGONA 1. Put 30g of white sugar into a ladle. 2. Put a ladle above the stove with very low heat and stir it with wooden chopstick. 3. Add 1g of baking soda into the melted sugar, and stir it again until the melted sugar inflated enough. 4. Pour the inflated sugar on the plate and press it for a while, and then make a shape with cookie cutters. As soon as pouring the chunk on the plate, press it with cutters and wait for 2~3 minutes to be solidified, then rip off the small fragments from it. 10 Pictures of DALGONA 11 Method of HOTTEOK 1. Mix dry ingredients(gluten flour, cornstarch, baking soda, salt) and sift. 2. Mix dry ingredients and 13g of corn oil, 15g of brown simple syrup and 25g of water. Then knead it for a while. 3. Mix wet and dry ingredients, then shape it with hands until every ingredient mixed thoroughly. 4. Cave in a dough and put white sugar into it and then cover white sugar with dough. 5. Put 4 into a hot pan with 4g of corn oil and panfry it. 6. After 1 minute, press it with pressing plate and browning both sides for 5~10 minutes more. 12 Pictures of HOTTEOK 13 Method of Maple smoked syrup 1. Put brown sugar and water into a pot and boil it(simple syrup). 2. Grind simple syrup with 1g of xanthan gum. 3. Wrap it and smoke it with maple wood chips for 30 minutes. 4. Cool it into a bowl. 14 Pictures of Maple smoked syrup 15 Method of fruit caviar <Technique: Freeze spherification> 1. Put 500g of diluted water and 2.5g of sodium alginate, 2g of strawberry flavor “iqemusu”, 2g of xanthan gum into a mixer and mix it thoroughly. 2. Boil it into a pot until it gets sticky(xanthan gum makes liquid stickier at high temperature). 3. Pour the liquid into a big cup. Then, add 5 drops of red food color and mix it. Put this liquid into round ice mold and freeze it more than 3 hours. 4. Mix 1000ml of diluted water and 12g of Calcic, then stir it until Calcic goes to dissolve into the water. 16 Method of fruit caviar <Technique: Freeze spherification> 5. Pull out the caviar from ice mold and then put this on the Calcic water. 6. Stir it with a spoon for 3~4 minutes until it gets jelly-like texture. 7. Rinse this caviar into diluted water and then take it out from diluted water and remove the moisture by draining it. 17 Pictures of fruit caviar 18 Plating 1. Cut HOTTEOK into a small rectangular shape. 2. Spread smoked syrup on the white plate. 3. Put HOTTEOK pieces, DALGONA, caviar on a plate and sprinkle sifted sugar powder on top of it. 19 Thank you… 20.
