The Hurricane Boozy, refreshing & more than a little dangerous. Born in New Orleans in the 1940s out of a surplus of rum, the Hurricane SHOULD be a simple combination of citrus, passionfruit and rum (lots of rum). Specs: 40ml (1 & 1/3oz) light rum 40ml (1 & 1/3oz) dark rum 30ml (1oz) passionfruit syrup* 30ml (1oz) fresh lemon juice (lemon juice was the original here, even though lime and rum are the obvious partners- I actually like the softer acid here, since the passionfruit is also providing some tang) Orange wedge to garnish Cherry to garnish Cocktail umbrella to garnish (optional!) Equipment: A jigger Shaker tins A Hurricane glass, or regular rocks or highball is fine (the only problem is that Hurricane glasses are usually HUGE- as was the original recipe which calls for 2 full shots of each rum i.e. a 4 shot cocktail. You’d have to enlarge this recipe by at least half if you want to fill your glass up and really make a night of it!) Method: Add all of your ingredients to your shaker tins, fill with ice, and shake hard! Pop your tins open and we’re just going to ‘shake and dump’ i.e. pour the entire contents of your shaker into the glass. This will obviously leave little bits of passionfruit in there, which I enjoy, but if you don’t then double strain. It is traditionally served on crushed ice, and I find the shake and dump method the easiest (laziest!) way to achieve a similar effect without a crushed ice machine, but of course if you have one (or just want to take out some frustration!) then go for it! Garnish – the cheesier the better – and enjoy. *Passionfruit Syrup: Mix equal parts 1:1 sugar syrup and passionfruit pulp or purée. Leave to sit for at least two hours, preferably overnight, then strain (or not, if you like the crunchy seeds). Suggested ingredients: Although the blending in this particular cocktail was more likely born from using up whatever rums were lying about, blending is a well-respected practice in tiki bartending to get the best from different styles of rum and achieve balance. Plantation make great rums for cocktails- interesting and bold enough to stand up and be the hero, but nice and smooth from further ageing in cognac barrels. We’ve used their spicy Original Dark for our dark rum and while we could have used their fruity 3 Star, we’ve gone for Pampero Blanco for our light rum. According to the arrest report, Heldenbrand, 42, stole the money from Simmons and office partner Dr. Ernest J. Gesiotto while she worked as their office manager and bookkeeper. She reportedly forged her name on their business checks and then deposited the funds into her personal banking account. Simmons told police that when he confronted Heldenbrand about the thefts, she admitted that she had committed the crimes over a period of about 1 1/2 years, which is the length of time she was employed there. Simmons reported this to the police Feb. 8. A police investigation revealed well in excess of 10 business checks of Simmons that had been made payable to cash, with Simmons' signature forged on them. They were endorsed "For Deposit Only" to the personal account of Heldenbrand and her husband.

    Trails of the Cocktail Few cities can boast more historic significance in their cocktail culture than the Crescent City: birthplace of the Sazerac, Ramos Gin Fizz, the Grasshopper, the Hurricane, and (backed by one of the best apocryphal origin stories ever concocted) even the cocktail itself. In 1769 Spanish Colonial Governor of Louisiana Alejandro O‟Reilly issued a proclamation allowing one limonadier (lemonade seller), twelve taverns and six billiard halls to dispense alcoholic beverages. Closing time was ordained to be 8 pm, but bribes to the necessary officials extended the hours over the years. Rum came into the port of New Orleans and was taxed by the Spanish colonial government. Pat O‟s, Home of “The Hurricane” The “Hurricane”, the most popular drink at Pat O‟Brien‟s in the French Quarter, was created during World War II when liquor such as whiskey was in short supply. In order to purchase just one case of these preferred liquors, liquor salesmen compelled bar owners to purchase as many as 50 cases of rum, which was plentiful. In an effort to utilize the excess of rum, Pat O‟Brien's famous recipe emerged. The name came along soon after when a glass (shaped like a hurricane lamp chimney) was used to serve the popular rum cocktail. Don the Beachcomber (1907 — 1989), founding father of Tiki culture (Tiki bars, restaurants and nightclubs), enjoyed great popularity in the United States — mostly from the late 1940s through the mid-1960s. He and his friendly rival “Trader Vic” Bergeron are still remembered for their cultural influence.

Garnish with a lime wheel, a sprig of mint and a piece of candied ginger. Serve with a straw. *Ginger Beer 1 gallon water 1 pound ginger root, peeled 4 oz light brown sugar or 6 oz light agave syrup 2 oz fresh lime juice Place the water in a sauce pan, bring to a boil. Cut the ginger into smaller pieces and mix this in a food processor with some of the hot water until the mixture resembles mulch. Then add this back into the pot of water, turn off the heat, cover, and allow it to steep for one hour. Once cooled, strain the mixture through cheese cloth or a sieve, extracting as much flavor from the solids as you can. Discard the solids. Add the lime juice and sugar/syrup, stir. Let cool, then transfer to bottle(s). Store in refrigerator. Note: this will not yield a conventional, carbonated ginger beer.
