At each stage of the rearing process, our oysters are carefully controlled in line with applicable food safety standards. Every week, our professionals check the sanitary quality of our oysters. Tradition and modernity are our two guiding principles: although our oysters are cultivated by hand, in a continuation of the movements and artisan methods developed by our ancestors, this is controlled through rigorous monitoring based on the most advanced biological and environmental knowledge. We prioritise the local identity of our products. That’s why our oyster spats come from the hatchery in Gatteville-le-Phare (Manche), located less than 20 km from the breeding beds. We are committed to only marketing oysters that we raise in our farms.

FARMING-MATURING Our oysters are farmed in the open sea for an average of 22 months (depending on the size). Two months before they are sold, they are transferred to maturing beds, closer to the coast, so that their shells harden completely.
