Emilio Mignucci, vice president of culinary pioneering, Di Bruno Bros. We have a few people here—four or five of us—and we plan ahead of time what our goals are, and what we are looking for. It’s a big show, so we plan our meetings and stick to our schedule, and follow that roadmap that we create. There is lot to see and do. We try not to meet with our regular vendors here, because we see them every day. The app that the Specialty Food Association created a few years ago really helps you plan and walk the show. Being a part of the Retailer Network Council offers us some great benefits, like having some space to be able to have conversations. There are a lot of great benefits to being a retail member of the Association, and we take advantage of that. SFA has come a long way, and they’ve done a lot to make the show a better experience.

Danielle Vogel, founder, Glen’s Garden Market It is extremely difficult to walk the entire show floor as an all-local grocer, because while the state-based pavilions are great, we still have to walk the entire floor just looking for badges that have locations that meet our sourcing standards. We always try to walk the entire show floor in one day.

Maren Trocki, director of grocery and dairy, The Fresh Market We typically bring a big crew to Fancy Food, and divide and conquer. We are here to find new products, so we clear our schedules—no meetings—and scatter to look for new products at the show. Whether it is San Francisco or New York, we also take full advantage of being in the city to look for new products, flavors, and merchandising ideas. Fancy Food is always a chance for us to refresh and be inspired!

Robin McNamara, director of specialty foods, Roche Bros. The term “kid in a candy store” comes to mind. I’ll start in Incubator Village [and New Brands on the Shelf] to meet the smaller companies, which have a unique way of being way ahead of current trends. From there, the first few aisles are usually indicative of what’s up and coming— sometimes in a subtle way, and other times it just screams at you. It’s aisle by aisle, and booth by booth, starting with medium-length discussions, and returning to specific booths and vendors once I’ve covered the entire floor. At the end of the first day begins the true review and thought process of what I’ve seen, along with all the “who, what, where, and why” questions to ensure that a product or concept is viable. The other factor that is always considered is where will the product come from—how will our stores get the product delivered.

And you pay attention to the food “story,” learning how food is grown, processed, and packaged. But it’s not just health-consciousness that drives consumer spending decisions. Dining choices are made for health and nutrition reasons and for the sheer pleasure of having a flavorful, well-prepared meal. Specialty food producers are quick to respond to consumers’ desires in ways that Big Food hasn’t been—and hence, we’re growing much faster than the big guys. Sounds like you think Big Food has missed some opportu- nities with consumers? Oh, yeah. It’s clear to me that most big manufacturers are plagued by the same problem: they’re not developing and distributing the types of products that consumers want today. That’s why smaller companies get started—they see a consumer need and fill it. Many emerging specialty brands—innovative, quick, and totally focused on what consumers want—have crept onto the scene and are making big inroads with small steps. They’re leveraging technologies and developing guerilla marketing skills­—based on so- cial media mostly—and they’re quick to take advantage of new channels, willing to be placed anywhere consumers shop. They’re changing the marketplace. Big brands used to dominate through sheer scale and hefty advertising budgets but that bureaucratic ap- proach just isn’t working anymore. 1 Big Food could have stayed competitive by responding to consumers who have been clearly shifting their dining preferences toward creative, healthier, and non-mass– produced products. The very things that got Big Food so big in the first place—highly processed, hyper-convenient, and/or chemically enhanced foods—are no longer relevant. What does the growth in specialty food mean for the Specialty Food Association? Well, the short answer is: it’s fantastic! To be more thoughtful, it does require us to care- fully build out our member value. In the past, SFA membership was exclusively produc- ers, but it’s clear that today’s industry is a more inclusive community of makers, buyers, suppliers, distributors, etc. We’re reliant upon one another to succeed and to reach the greatest number of consumers possible. The Association is working to expand our defi- 2 nition of membership, open it up, and be “agnostic” to the various channels. We want to offer value to everyone “in the tent” including start-ups and affiliated businesses. As the organization responsible for serving this dynamic community, SFA’s role is to prepare our member companies for success in the marketplace and to help them understand and prepare for the market’s changing needs. Our Mission Statement says it all—To champion, nurture, and connect members to deliver innovative products and expand consumption of specialty food. What advice do you have for specialty food producers, buyers, and distributors? Here are a few things to keep in mind: • Remember that we’re seeing a true renaissance in food education and interest. We now have the most aware group of customers ever for the foods we produce and serve.
