Menu Selections Menu selectons are requested a minimum of four (4) weeks prior to event. No menu changes will be accepted two (2) weeks prior to the event.

Minimums and Guarantees Due to the high volume of Special Events, please let us know your final head count one (1) week prior to the event. This is the guarantee for the number of guests for whom you are ordering food. No cancellations will be accepted after this date. However, if your count increases, please notify us at once. It is extremely expensive for us to purchase and prepare food when your count increases shortly before the party. Therefore, count increases 72 hours or less prior to your event will be reflected in the final invoice. You will be charged for the number of guests guaranteed, the number of people for whom food is ordered, or the number of people served, whichever is greater.

Reduction in Guest Count If the number of guests for any of the food and beverage functions listed above is reduced by more than 20%, a cancellation fee equal to the number of people cancelled in excess of this 20% multiplied by our average menu price for the function will be charged. A cancellation fee will be charged if any of the food and beverage functions, which are listed above, are cancelled. This fee will be equal to the number of people cancelled multiplied by our average menu prices for that function.

Prices In the event that a specific menu item is unavailable, we reserve the right to make reasonable substitutions. Of course, you will be notified should this occur.

Outside Food & Beverage AQUA TERRA Culinary must supply all food & beverage for the Monterey Conference Center. Guests and attendees will not be permitted to bring any outside food or beverage into the Conference Center.

Billing A deposit equivalent to 50% of your event estimate is due and payable two months prior to event, along with a copy of the signed contract. Payment of the remaining balance of the estimated Food and Beverage charges is due and payable at the start of the event. Payment of any additional fees resulting from added services due to change orders are required upon receipt of the final invoice. Interest charges of 2.4% (compounded monthly) will be added to any outstanding amount that remains outstanding past 30 days from invoice date.
