Prices are quoted in HKD and subject to 10% service charge the producers BRANDT RANCH The Brandt family have been raising live stock on their ranch in Brawley California since the 1900’s. Their focus is 100% pure breed Holstein Cattle. Brandt is the more traditional grain fed beef you get from the US but they still tend to keep the cattle on pasture they do give them a minimum of 365 days on corn towards the end of the cycle.

SNAKE RIVER FARM Was founded in 1968 by Robert Rebholtz Snr under the name of Agri Beef, the farm can be found on the Snake River plains in Eastern Idaho. Snake River produce some of the finest American Wagyu x Angus beef on the market. They also breed wonderful pure breed Berkshire Pigs. Snake River Farm’s a considered one of the USA’s premium animal farmers.

44 FARMS 44 Farms is a 4th generation ranch which is looked after by the McClaren family who started grazing cattle there in 1909. They raise some of the finest 100% Pure Breed Black Angus in the USA, the ranch sits just outside of Austin Texas. The cows are raised mostly on pasture then finish for around 120 days on grain. Most of the beef they produce will be certified for USDA Prime.

ELYSIAN FIELDS LAMB Started by Keith Martin an ex investment banker in 1989, Elysian Fields Farm sits on 200 acres of glorious countryside in Greene County, Pennsylvania. Working with Chef Thomas Keller, Keith wanted to produce lamb with a holistic approach to farming, they proceeded to set up Pure Bred, which is a farm collective, bringing together 7 family farms from across Ohio and Pennsylvania. Each lamb has its own tracking number to allow us to know where it came from and who raised it.

BECKER LANE ORGANIC FARM Becker Lane Farm was established in 1850 by Christopher Becker who had immigrated to the US from Germany. The 6 generation farm can be found in Dyersville Iowa where it is now overseen by Jude Becker, who revolutionized the way they raised pigs in the early 2000’s bringing in pure breed Berkshire pigs and allowing them to roam freely around the farms lush pastures. the butchers shop specials 9TH MAY 2020
