2015 Yılı Araştırma Faaliyet Raporu T.C. Namık Kemal Üniversitesi Ziraat Fakültesi 2015 Yılı Araştırma Faaliyet Raporu Tekirdağ-2016 SUNUŞ Trakya Bölgesi artan nüfusu ve göç alımı ile sürekli büyüyen ve gelişen bir bölgedir. Türkiye arazi varlığının % 3’ünü ve ülke nüfusunun % 18’ini oluşturmaktadır. Ekilebilir alanlarının çok oluşu ile büyük bir tarım potansiyeline sahip olmakla birlikte, geçen son 20-25 yıldır artan sanayi yatırımlarıyla da ülkenin önemli sanayi merkezlerinden biri olmuştur. Namık Kemal Üniversitesi Ziraat Fakültesi ise böyle bir bölgede faaliyet gösteren tek Tarımsal Yükseköğretim Kurumudur. Ziraat Fakültesi, tarım sektörü içerisinde çiftlikten sofraya kadar çok önemli ve geniş bir faaliyet alanı olan Ziraat Mühendisliği yükseköğretimini 33 yıldır sürmekte birlikte, günümüzde 9 farklı bölüm ve bunlara bağlı 22 ana bilim dalında lisans ve lisansüstü eğitimi yapmaktadır. Fakülte mesleki beceriye sahip, kendini geliştiren, özgür düşünceli, girişimcilik özelliklerine sahip ve ülke tarımının gelişimine katkı sağlayacak Ziraat Mühendisleri, Gıda Mühendisleri ve Biyosistem Mühendisleri yetiştirmektedir. Fakülte uygulamalı bir eğitimin gerektirdiği deneme ve uygulama alanları ile tarımın her dalında teknoloji üretip ve bu teknolojiyi yayma girişiminde bulunulmaktadır. Her geçen gün önemini biraz daha iyi algıladığımız tarım, tüm toplumun ilgi odağında bulunan, yükselen bir meslektir. Bu mesleğin mensubu olan Fakültemiz öğretim üyelerinin, 2015 yılında yayınlanan araştırma faaliyetlerinin özetlerini bu çalışmada bir bütün olarak derlemiş bulunmaktayız. Bu değerli eserin sahibi çalışma arkadaşlarımı tebrik ediyorum. Eserin araştırıcılara, çiftçilere, öğrencilere ve ilgilenenlere yararlı olacağı inancımla, tüm kullanıcılara sevgi ve saygılar sunarım. This study is undertaken to evaluate knowledge, attitude and practice of mothers about childhood diarrheal diseases in a suburban area. Methods: This descriptive study was carried out in a primary school in a suburban area of İstanbul. One hundred and forty four mothers of children included accepted in the study with response rate of 85%. A questionnaire form was applied for data collection. Epi-Info programme was used for statistical analysis. In addition to the descriptive statistical methods, for the comparison of qualitative data a chi-square test was used . Results: In our study, the percentage of mothers who could define diarrhea correctly was 40%. Abdominal pain and watery defecation were the main signs which the mothers understand their children have diarrhea. Most of the mothers indicated that microbes as the cause of diarrhea.

SPALDING Thesis Director: Nurgül Fitzgerald, Ph.D., R.D. Much has been written about the Mediterranean Diet (MD), its beneficial health effects, and its many variations. Turkey, located at the eastern end of the Mediterranean, has been described as having a MD, however there has been little to no previous research about its MD pattern. This study examined dietary intake patterns, Mediterranean diet (MD) adherence and how MD adherence varied by city location in a geographically diverse sample of adults (aged 19 and older, n=3,001) living in urban centers in Turkey. The study was conducted as a secondary analysis of cross-sectional, nationally representative data collected in 2001-2002. Dietary intake was assessed by a 60 item semi-quantitative food frequency questionnaire. The MedDietScore and the Mediterranean-Style Dietary Pattern Score (MSDPS) were used to evaluate MD adherence. Variations in MD indices were examined using correlation, independent sample t-tests, ANOVA, ANCOVA and logistic regression. The dietary intake pattern ii was examined using factor analysis. The Turkish adults in this study followed a unique dietary pattern which included some characteristics of the MD but also had differences from the MD pattern.

By putting the traumatic experiences and the memories of 1915 in the cultural contexts of daily lives such as through music, food, and art, Armenians in Turkey found alternative ways to speak about their silenced past and create spaces in which to be heard. These spaces in Tovmasyan and Margosyan’s case are the kitchen, the table and the market place. Reading food in literary works written by Tovmasyan and Margosyan enables us to understand and articulate the Armenian experience in Turkey since the 1990s. Food might be considered one of the “safest” topics to talk about the “other”, especially when the other is integrated into the dominant culture and safely visible to the dominant gaze by stripping off its traumatic past. However, food items with their sensual properties trigger the memories of the past through smell, taste and hearing and they become important tools to remember and reconstruct the past in present conditions.

Leblebi, nohudun bazı ön işlemlerden geçtikten sonra farklı sıcaklıklarda kavrulması ile elde edilen ve çerez olarak tüketilen geleneksel bir üründür. Nohuttan leblebi üretimi sürecinde nohutların sınıflandırılması, tavlanması, ıslatılması, kavrulması ve elenmesi gibi işlem aşamalarından geçmesi gerekmektedir. Bu çalışmada, farklı kavurma sıcaklığı ve sürelerinde işlenen nohutlarda görülen kimyasal (protein, karbonhidrat, lif, kül, nem) değişimi incelenmiştir. Duyusal analiz sonuçlarının (çiğ koku, yanık koku, çiğ tat ve yanık tat) değerlendirilmesi ile kavrulan leblebilerin kalitesi belirlenmeye çalışılmıştır. Kavurma sıcaklık ve süreleri ön denemeler sonucunda 150±5 °C, 180±5 °C ve 200±5 °C; 4, 6, ve 8 dakika olarak tespit edilmiştir. Çalışmada tesadüf parselleri deneme deseni kullanılmış ve 3 tekerrürlü olarak gerçekleştirilmiştir. Çalışmanın sonuçlarına göre; kül, lif ve ham protein içerikleri istatistiksel olarak bir değişikliğe uğramamıştır (p>0.05). Buna karşılık, nem ve toplam nişasta içeriği önemli derecede (p<0.05) azalmıştır. Duyusal analiz sonuçlarına göre; kavurma sıcaklık ve süresinin artması ile birlikte yanık koku ve yanık tat değerinin arttığı, çiğ koku ve çiğ tat özelliklerinin ise azaldığı gözlenmiştir.

As a part of the human culture, food carries complex significance and symbolic meanings. Turkish people attribute great value to food and its usage specifically tied to rites of passage of human life. Traditions, especially the ones practiced during rites of passage, such as birth, circumcisions, weddings and funerals, have always been accompanied by food in Turkish culture. Since food celebrates and symbolizes human progress in life in the culture, it also surrounds by aspects of belief, custom, magic, ritual and religion and has always been used in ceremonial context during such rites. Even though that context may be different depending on the religious, economic and social nuances of the various Turkish regions, like wheat, meat and bread, certain kinds of food play key roles during Turkish rites, generally upholding traditions. This paper highlights the place of food in the rites of passage in Turkish culture. Key words: food, culture, rites of passage, ceremony.
