Zapa Malbec Zapa is made from the juice of Malbec grapes alone, grown in 70 year old vineyards in Mendoza, Central West Argentina. Very deep ruby-red tones, brilliant and clean.

On the nose, complex aromas of red fruits are combined with a touch of wood which enhances the presence of chocolate and vanilla. The texture is supple, with ripe tannins and a well balanced finish.

Adobe Reserva Carmenère, Colchagua Valley The Colchagua Valley extends from San Fernando in the north to Chimbarongo in the south. The climate is Mediterranean, and the area receives winds from the south and morning fog. Springs are frost-free, and summers are very warm, which encourages proper ripening.

Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics.

The Scott family, owners of Allan Scott Family Winemakers, have long had an affinity with Central Otago. The Scott Base Vineyard was established in 1994 and is situated in the heart of Central Otago on terraces overlooking the town of Cromwell and Lake Dunstan.

VITICULTURE Scott Base is a terraced vineyard with sandy, silty, loam soil, and sustainably managed. The vines are spur pruned and the laterals removed to encourage the vine to concentrate on fruit production. The Pinot Noir Reserve grapes come off the vines at the bottom of the terrace.

VINIFICATION Each batch of grapes was hand-picked in the cool of themorning, pressed, and the juice settled at cool temperatures. This was then 25% whole bunch fermented using wild yeasts. When the alcoholic fermentation is near completion the wine is allowed to go through a full and then a further maturation in barrels.

Scott Base Pinot Noir Aromas of berry fruit and black cherries, with wild thyme and nutty oak over layers of savoury spice. It is a medium-bodied wine that is rich and luscious, with supple tannins, balanced acidity, and a long finish.

The grapes were harvested in the early morning to preserve their flavour, then de-stemmed, crushed and lightly pressed with minimal skin contact. Fermentation was at low temperatures in stainless steel with selected yeast strains to preserve the inherent fruit flavours.

Old Clem Old Clem comes from Pope Clement I and is known as the Patron Saint of Metalworkers and Blacksmiths.

Traditionally celebrated on the 23 November as a welcome festival between Halloween and Christmas. “Old Clem’s Night” started literally with a bang and showers of sparks.

During the ritual there was the “Firing of the Anvil”, where the Blacksmith would pack gunpowder into a small hole in an Anvil, then strike it soundly with a hammer, causing a small explosion. The Anvil firing was also a test of the Anvil’s durability: weak Anvils would break under pressure, and had then to be re-forged.
