The Governor announced this week that New York State will be closed through April 29 due to COVID-19. As a result, Coney Island Prep will also be closed through April 29. During this time, CIP will take guidance from the city and state around when schools will reopen. We will give families at least 48 hours notice before our schools reopen and in upcoming weeks we will share more information about how to continue to support learning at home. As a reminder Spring Break begins tomorrow, while school is closed scholars will still have work available on the website, coneyislandprep.org. CIP staff will have limited availability over Spring Break but if you have any questions, please reach out to CIPES (347) 486-0942 and we will do our best to respond quickly. YIELD: 30 Funfetti Cake Mix Cookies
Funfetti Cake Mix Cookies is one of my all-time favourite cookie recipes ever, I just love the spring 'Eastery' look and the moist cake-like taste - and it's easy because you use a boxed cake mix. This is one amazing cookie, guys, and there's video instructions!
PREP TIME COOK TIME TOTAL TIME 15 minutes 15 minutes 30 minutes
Ingredients
1 box Confetti Cake Mix 1/3 Cup Oil 2 Eggs 3-4 tbps Sprinkles {of choosing} 1 - 1/3 cup M&Ms
Instructions
1. Preheat oven at 350º F. 2. In a large bowl, add dry cake mix, oil and eggs. 3. Stir with a spoon until combined. 4. Add the sprinkles to the cake batter and gently mix. 5. Add M&M's and gently mix. 6. Shape dough into 1″ balls and place them about 2″ apart on a parchment paper lined cookie sheet. 7. If you have more M&M's, stick a few in the top of the balls if you so wish - the more the merrier! 8. Bake for 6 to 7 minutes, but make sure you don't overcook so they don't dry out. I take them out just when I see an edge starting to brown. 9. Enjoy!
