Recipe Section

Class 57 - Fruit Cake Ingredients: - 3 eggs 9oz self raising flour 6 oz sultanas 6 oz butter or margarine 3 oz currants 6 oz sugar 3 oz candied peel This will make approximately a 2lb cake.

Class 82 - Home Made Lemonade

Ingredients: - 6 lemons, 2lb sugar, 1oz citric acid

Method: - Pare the skin from the lemons, avoiding the white part, then cut the lemons in half and squeeze out the juice. Place peel, juice and sugar in a bowl and pour on about 1½ pints of boiling water. Set it to stand overnight. Strain the liquid; add the citric acid and bottle. Dilute to taste. For show purposes we need a bottle of the undiluted essence in a clear bottle.

15 Class 70 Oatmeal Parkin

Ingredients:- 200g (7oz) golden syrup 25g (1oz) plus one teaspoon black treacle 110g (4oz) marge 110g (4oz) soft brown sugar 225g (8oz) medium oatmeal 110g (4oz) self raising flour 2 level teaspoons ground ginger Pinch of salt 1 large egg, beaten 1 tablespoon of milk

Method:- Preheat oven to 140o-C (275oF, Mark 1) Place syrup, treacle, marge and sugar in a saucepan over a gentle heat until the marge has melted. DO NOT LET IT BOIL. Weigh the oatmeal, flour and ginger into a mixing bowl and add the salt. Gradually stir in the warmed syrup mixture until it is thoroughly blended. Add the beaten egg and lastly the milk. Pour into a greased 8” (20cm) square baking tin and bake on the middle shelf of the oven for 1¾ to 2 hours. Leave in the tin to cool for 30 mins. Cut into squares and store in a tin until required. These improve with keeping so can be made at least a week before you need them.

Class 137—Fudgy Banana Muffins

Ingredients: 250g self-raising flour 1 tsp baking powder 100g fudge 100g soft light brown sugar 75g butter 125ml milk 1 tsp vanilla essence 2 medium ripe bananas 2 medium eggs 2 tbsps clear honey

Pre-heat the oven to 190oC, 375oF, Gas Mark 5. Put a paper muffin case in each hole in a 12 hole muffin tray. Sieve the flour and baking powder into a large bowl. Cut the fudge into chunks and add the sugar and fudge to the flour and stir them together. Make a hollow in the middle of the mixture. Melt the butter and add the milk and vanilla essence. Mash the bananas until fairly smooth. Break the eggs into another bowl and beat. Add the bananas and beaten egg to the butter and milk mixture and then pour all of it into the hollow in the dry ingredients. Mix together until uniform. It will still look quite lumpy. Spoon the mixture into the paper cases. Bake the muffins for about 20 minutes until firm and well risen. Leave them in the tray to cool for 5 minutes then brush the tops with honey and lift them onto a wire rack to cool. ~~~~~~~~~~~~~~~~~~~~~~~~~

18 Hints and tips page

Flowers and flower display

Water is provided but containers, vases and backboards are not so you have to bring anything you may need with you.

Fruit and vegetables

Presentation is really important.

To help you present your onions or tomatoes, you may wish to stand them in a little sand on a plate or use circles of cardboard tube to stop them rolling around.

All tomatoes must be shown with their calyces.

Make sure all your veg. are carefully cleaned and that you have tried to match them to each other for size, shape and colour.

Home Industries

Make sure all baking is covered with cling film, but don’t make it impenetrable— the stewards get very frustrated having to break into a plastic fortress! Please do not use paper plates as we will recover your baking once it has been judged and this is difficult to achieve on paper plates. For preserves, you may use any sterile jar of the correct size you wish. Please ensure that your name is not visible on any container. Jars with screw tops do not need waxed discs. Other jars should have a waxed disc and a cellophane dust cover. Do not over or under fill your jars, the preserve should come to the top of the jar but not into the neck. For pickles, jars must have metal screw tops which must be really clean and have the plastic coating undamaged. For both jams and pickles, please open your jar and check for mould before you enter it.

If you are an old hand at showing and have any other hints you are happy to pass on, please talk to us at the Secretary’s table. We are always looking for ways to make exhibiting not so intimidating for the novice.
