Foreword
Aaron Patterson Those of us who live in Leicestershire and Rutland can take the area’s beauty for granted. I like to go for a run around the shore of Rutland Water and appreciate what we’ve got on our doorstep. With so many passionate farmers and producers in the region, it’s not surprising that the area is fast becoming a foodie haven, with the local dining scene continually going from strength to strength. We have some really interesting suppliers who make our work possible. It’s the passion and hard work of these people that make this area’s produce so good. Game in particular is excellent, coming straight from the shoot, and there are some really knowledgeable individuals who gather foraged treats like crayfi sh and wild mushrooms. Hedgerows are fabulous to explore, and can yield rich pickings of wild cherries, blackberries and young nettles if you know where to look. There is a constant battle in the industry to produce food at a reasonable price. Driving energy prices and the growing cost of quality ingredients mean that we chefs must get a bit more creative with our dishes. By not using the prime cuts of meat all the time and experimenting with foraged produce, exciting and delicious food can be created while keeping prices down. Recently, the food scene has gone full circle. Fashions change all the time and restaurateurs must keep up. At one point, nouvelle cuisine was all the rage, then Heston Blumenthal came along and dining developed theatricality. Recently I’ve noticed a demand for simplicity and clarity of fl avour, which requires the best-quality ingredients from trusted suppliers. The Melton Farmers’ market is excellent for sourcing quality produce; whether you’re after rabbit, cheese or eggs, you can be assured that your food is coming from passionate individuals who care. Every year there seem to be more and more great gastropubs and restaurants popping up all over the region, and it’s great to see so many talented chefs – many of whom have been trained at Hambleton – returning to the area. It’s worth getting out, going to markets and shows, and chatting to others who are enthusiastic about their food – you’re guaranteed good conversation and never know what you’ll learn. The coming year promises to be another excellent one for the Leicestershire and Rutland dining scene. Take advantage of it; go to your local farmers’ market, go foraging and take a moment to explore the beautiful landscape. We are truly lucky to be in such a special area.

Aaron Patterson, head chef since 1991, cooks with great energy and fl air, combining seasonal produce, herbs, salads and berries from the kitchen garden * and top-quality seafood and game (when in season) from trusted suppliers to create £68 delicious modern European dishes. Whether it’s a lunch party for two, a wedding breakfast for 60 or a reception for 64, the dining room, private dining room, study or croquet pavilion can be confi gured to create the right setting – the hotel can also be hired for exclusive use. Hambleton runs with a smoothness that comes from long practice, unremitting attention to detail and continually providing ‘a warm welcome, seamless service, glorious food and delicious wines’. The interior is stylish and comfortable, with spectacular views over glorious gardens and Rutland Water. There are also 17 individually and lavishly decorated bedrooms. Open: Mon-Sun In the elegant restaurant, sommelier Dominique Baduel presides over the noon-1.30pm, 7pm-9.30pm award-winning wine list, with lots of interest at all levels. The menu format offers a wide range of Hambleton’s favourite dishes. Begin with Colwick cheese tortellini with pumpkin velouté, followed by loin of fallow venison with celeriac and chocolate. Finish with golden chocolate with passion fruit sorbet and honeycomb. The lunch-for- less menu offers further value and quality. For the true connoisseur, a six- course tasting menu can be taken for £85 and will leave you in no doubt as to the absolute quality of Hambleton Hall. *Price represents the cost of three courses from the à la carte menu.
The Marquess of Exeter Modern British Location 52 Main Street, Lyddington, Nr. Oakham, LE15 9LT t: 0844 683 0902 w: www.marquessexeter.co.uk e: [email protected] Ru A quaint, unassuming road in the pretty Rutland village of Lyddington is home to one of the fi nest dining-out spots in the area: The Marquess of Exeter. Reopened in 2009 after a sympathetic refurbishment, The Marquess of Exeter now boasts a laid-back £23 restaurant serving up culinary delights in abundance, a versatile private dining area, to and well-appointed en-suite guest rooms. The original features of this Grade II listed £28 building are complemented by classic furnishings, fresh fl owers and a light, bright colour scheme, and an ambience of informal elegance pervades throughout. The Marquess of Exeter is owned and run by chef Brian Baker (chef profi le page 39), whose culinary career has seen him cater for celebrities and VIPs around the world, including Elton John and fashion designer Valentino. He was also one of the youngest chefs to receive a Michelin star, which he was awarded at Hambleton Hall aged 21. He brings an unfailing enthusiasm for fi ne produce to the Marquess kitchen. All ingredients, including seafood, are delivered fresh every morning, and chickens Open: Mon-Sun 11am-11pm and pigs are reared on-site. Brian Food Served: Mon-Sat and his team only serve food they are noon-2.30pm, passionate about and that they are 6.30pm-9.30pm; confi dent is top quality. This goes for Sun noon-3pm, 6.30pm-9pm the à la carte dishes and those served on the set lunch menu, which is offered Monday through to Saturday. The Marquess also offers takeaway fi sh and chips between 5pm and 7pm every Friday evening, and Brian hosts a number of cooking demonstrations throughout the year.

Its pretty grounds, stunning views and excellent to leisure facilities make it the ideal place for a wedding reception, corporate event £30 or romantic getaway, but even if you’re not staying or celebrating a special occasion, treating yourself to a meal at the superb restaurant or relaxed lounge- bar is a must. The restaurant is smart yet laid-back and lends itself well to everything from an intimate meal for two to a get-together with friends, while the bar offers a more informal dining experience for those looking to enjoy a leisurely bite to eat. If the easy-going ambience of the bar has drawn you in, settle down for a wholesome meal from the tempting lunch menu and a drink from the extensive beverage menu. The well-known country pub £17 with rooms has a reputation for excellent service, food and drink. There is a to vibrant bar and a quality adjoining restaurant, which provides a welcome oasis £25 for weary walkers making their way around the Beacon Hills or Bradgate Park. The pub has been owned and run by Phil and Kara for the past 11 years, during which time they’ve garnered an enviable reputation for stylishly presented, locally sourced food. You’re guaranteed a warm welcome from the friendly, effi cient team of staff, whether you’re visiting for a quick lunch or a lazy dinner. For lunch, diners might try the toasted open sandwich of smoked mackerel, pickled cucumber and rocket. The wide-ranging à la carte menu includes meat from local butchers, game from local shoots and a fi ne combination of fi sh and vegetarian meals as well. The bar serves a diverse range of local ale and also offers 30 wines by the glass. For an evening meal, you might like to start with celeriac fondant, confi t egg yolk and crispy shallot salad, before moving on to serrano-wrapped monkfi sh with scalloped potatoes, purple sprouting broccoli and lemon beurre blanc. Other enticing mains include guinea fowl with devils on horseback, apricot and game stuffi ng with textures of swede and Madeira jus. Finish with a divine dessert such as date and toffee pudding with clotted cream, or vanilla, tonka bean and brandy crème brûlée with rum and raisin ice cream. Open: Mon-Thurs noon-11pm; The Manor House utilises the very best local produce and offers excellent Fri & Sat noon-midnight; hospitality, so rest assured that your experience will be a positive one. A visit Sun noon-7.30pm to The Manor House is also remarkably light on the wallet, thanks to the (Sun noon-10pm Mar-Sept) fi xed-price menu that offers two courses for £12.95 or three for £16.95. The Food Served: Mon-Fri Manor Sunday roasts are among the best in the area, with choices including noon-2.30pm, 5pm-9pm; sea salt- and rosemary-rubbed roast topside of beef; thyme- and sea salt-rubbed chicken breast; and roast garlic-rubbed leg of lamb. This former farmhouse is tucked away in the desirable Rutland countryside and is the perfect £25 destination for a relaxing meal, fun-fi lled party, lavish wedding, pampering weekend to or family holiday. £30 Quite simply, this is a stylish hotel that delivers sophisticated food. Barnsdale’s kitchen brigade creates diverse modern British dishes, all beautifully presented. The emphasis on seasonal produce, sourced locally where possible – even from the hotel’s own kitchen garden – makes it diffi cult to decide what to choose from the imaginative menu. To start, my partner and I delighted in the pan-fried scallops with chorizo and pea shoots, and warm Exton Estate partridge with an artichoke, pear and beetroot salad with shallot dressing. Our mains surpassed expectations – my chargrilled sirloin of beef, with chips, roast tomato and stuffed mushroom, was plump and succulent, and my partner couldn’t stop raving about the fl avoursome Food Served: Mon-Sun marinated monkfi sh with vegetables noon-2.15pm, 7pm-9.45pm and deep-fried noodles. You will fi nd real ales at the bar, and the extensive wine list is divided into European and New World varieties. Inevitably, you’ll be enticed to book a room in these fabulous lodgings. The hotel boasts 45 stunning guest bedrooms, all en-suite. In addition, there are private suites with self-catering options, and conference rooms capable of accommodating 330 people.

Beautiful starters, such as the sweet potato scone with wilted Sun 7.30am-10am, noon-2pm baby spinach, poached egg and Hollandaise sauce, and main courses like pan-fried Bar Food Served: Mon-Sun sea trout with samphire, leek and wild mushroom velouté should certainly never be 11am-9pm overlooked. Desserts including the fi g and almond frangipane tart with stem ginger ice cream are all handmade in the kitchen. The front-of-house team don’t rest on their laurels either. They are passionate about offering a warm welcome and a great selection of wine and beer, and focus on continually improving the customer experience. A prime example is the new set-price lunch menu, which offers two courses and a complimentary £25 to aperitif for £10 or three courses and an aperitif for £12. £31 ‘...game terrine with kumquat jam and brioche...’ From the lunch menu, diners can expect to start with delectable dishes such as game terrine with kumquat jam and brioche. To follow, braised beef blade with mash and wild mushroom cream is sure to be a winner. Tempting treats are on offer to bring your meal to a sweet fi nish; chocolate parfait with blackberry sorbet and pistachio biscotti is just one example of the delicious desserts available. The Case’s evening menu is equally impressive, with an offering including beef Carpaccio with shallots to start, curried cod fi llet and sweet potato Dauphinoise with mussels to follow, and roast pineapple and Malibu tarte Tatin with yoghurt sorbet to fi nish. There’s also a set-price menu, with two courses for £16 and three for £20, allowing diners to enjoy excellent food and drink at excellent prices. It is evident from the menus that a passion to produce great British food with a global infl uence using modern techniques and fresh, seasonal produce is at the heart of The Case’s ethos. Taste, colour and texture are paramount to the plates. Whatever your preferences, there’s something fl avoursome for everyone here; the vegetarian and vegan dishes are particularly well regarded by customers. Located in a converted luggage factory with a private room for 44 guests and an 80-cover restaurant, this unique establishment is spread across four fl oors, each with its own atmosphere and charm. Thanks to this, The Case is perfect for any occasion, from a casual lunch with friends to a sophisticated fi ne dining experience. Renowned for providing superb service, this venue is sure to impress. Guests here are welcomed by blazing fi res, wonderful food and £19 friendly staff who attend to one’s every need. to £30 Visiting on a chilly evening, we began by the fi re, sipping a dram of Bunnahabhain whisky. Once suffi ciently warmed, we made our way to our table. The clever kitchen team has created a menu of enticing options. My husband began with thick and fl avoursome Portobello mushroom soup while I savoured Moroccan-spiced quinoa, which was light, unusual and simply delicious. To follow, my partner chose a succulent steak, while I picked smoked haddock and mussel chowder from the specials menu. Served in a creamy sauce with the haddock in a single slice on top, garnished with fat mussels and crispy kale and accompanied by freshly baked sourdough, it was a superb dish. Unsurprisingly, it was a popular choice that evening. Food Served: Mon-Sat With an array of beautiful function 11.30am-5pm, rooms, The Falcon Hotel is a great 6.30pm-9.30pm; place to hold an event. A new garden Sun 11.30am-3pm room is underway and will be perfect for weddings. I fell in love with the upstairs Oakroom, with its single long table, oak panelling and a fi replace at either end. It was easy to imagine a big, mouth-watering joint being carved for guests, in the fl ickering light of the silver candelabra.
Modern British Burleigh Court Hotel & Conference Centre Location Off Ashby Road (A512), Loughborough University (West Park), Loughborough, LE11 3GR t: 0844 683 9156 CM w: www.burleigh-court.co.uk e: [email protected] Situated within Loughborough University campus, Burleigh Court is a bright, £20 spacious and modern four-star hotel and conference centre that also offers an to excellent dining experience in its restaurant. £35 We enjoyed the fabulous and plentiful Sunday carvery, and were very pleased with the starter selection of locally sourced meat, fi sh and vegetables that was presented at the salad bar. For the main course, the range of mouth-watering local roast meat and vegetables was equally impressive, and my companion declared his beef (served with all the trimmings, naturally) to be most tender and satisfying. My vegetarian choice of the butternut squash, pepper and Somerset Brie tart was incredibly moreish, and worked well with a serving of watercress sauce. Both mains were Open: Mon-Fri 7am-9am, substantial, and we agreed that the portions would more than satisfy even the most 12.30pm-2pm, 7pm-10pm; ravenous of appetites. However, with Sat & Sun 7.30am-10am, the display of tempting desserts, 12.30pm-2pm, 7pm-9pm which are supplied by Dominic at David North Patisserie in Rothley, any notions of forgoing a third course were soon dismissed. I plumped for the creamy, rich toffee cheesecake with a side helping of fresh fruit salad, and my companion chose the chocolate and cherry bombe. Both were sublime. Over coffee and mints we agreed that, due to the excellent quality of our meal, we would return very soon.

As a Small Luxury Hotel of the World, this 17th-century * country retreat is one of the UK’s fi nest stately homes, offering understated £40 opulence, fi ne dining and a warm welcome. to £60 Free from pretension, Stapleford Park maintains the highest standards of service. This excellence is exemplifi ed in the relaxing dining experience. Gourmet cuisine is served in the Grinling Gibbons dining room, which offers unrivalled fi ne dining in decadent two AA-rosette-awarded surroundings, while private-dining rooms are used to host intimate parties. The modern British menu includes starters such as Norfolk crab with confi t celeriac and red onion marmalade, and mains like line-caught wild sea bass with caulifl ower and almond granola, mussels, potato and Parmesan gnocchi. A more casual dining experience can be Food Served: Mon-Sat enjoyed in the Pavilion golf club at 6pm-9.15pm; lunch time. Sun noon-2pm, 6pm-9.15pm If you have something special to celebrate, Stapleford Park is a great choice, and caters for all functions – the country-house atmosphere is perfect for wedding receptions and civil ceremonies. Whatever your reason for visiting, members and guests always have a magnifi cent experience. *Price range represents the cost of a three-course meal.
The Grey Lady Modern British Location Sharpley Hill, Newtown Linford, Nr. Leicester, LE6 0AH t: 0844 683 0912 w: www.the-grey-lady.co.uk e: [email protected] CM The family-run Grey Lady restaurant has enjoyed an excellent reputation for many years, and the refi ned ambience, together with the delightful rural setting, makes this a smart choice for dining out. The food here is fresh and expertly prepared using £21 seasonal produce; the indulgent menus are sure to satisfy all tastes. There is also a to fi ve-course taster menu available on Monday to Thursday nights for £20. £32 I began with a starter of velvety smooth goat’s curd cheesecake, which was intelligently paired with sesame crackers, giving a contrasting crunch, and red onion jam and tomato sorbet for added sweetness. My grilled lemon sole with king prawns, queen scallops, crushed potato cake, cherry tomatoes and cucumber and Open: Mon-Sat horseradish sauce was full of refi ned noon-2pm, 6pm-9.30pm; fl avours. To follow, we enjoyed an Sun noon-3.30pm indulgent apple, pear and blackberry crumble tart with crème anglaise, and carrot cake with ginger cream and orange sorbet. The Grey Lady is a wonderful spot for getting together with friends, and the private function room also makes it the ideal venue for celebrating something special.

The restaurant specialises in Aberdeen Angus steak from local Blackberry Farm, hung for a minimum of 28 days and cut to order. The Hammer and Pincers was named the Hospitality Business of the Year 2012 and was a fi nalist for the Customer Care Award at the Oak FM’s Pride of Loughborough Awards. Newly built £27 in 2015 with a lovely beer garden for those sunny days, and a great external play area for children, it is perfect for families. Located close to the county showground and the popular Lands’ End outlet, it’s handy for an evening meal after a day out as well as being perfect for a leisurely lunch with friends. ‘...perfect for a leisurely lunch with friends...’ After perusing the extensive lists of dishes, my husband decided to choose from the two-for-one menu, which is packed with pub favourites. I chose from the specials board and was pleasantly surprised to fi nd that the two-for-one offer applied here as well, with the cheaper main course coming free. To start, he selected the generously sized prawn cocktail. I was tempted by the pâté in a pot, served in a miniature Kilner jar, made from fl avoursome chicken liver, and perfectly complemented by sweet chutney, green leaves and light, crispy toast. To follow, I opted for sea bass en papillote which arrived attractively wrapped in its paper. Inside I found a light, moist and delicious mound of green beans, mange tout, broccoli and melt-in-the-mouth sea bass fi llets. Served with new potatoes and butter, it was excellent. My husband chose the wonderfully tender steak and ale pie, with chips, peas and gravy. We fi nished with delicious apple crumble and lemon and mandarin sponge with a doughnut-shaped ring of sweet and zesty cake that paired particularly well with custard. Those who can’t manage a pudding can get it boxed to take home. Unsurprisingly, these take-away treats are proving popular. The pub also specialises in hand-stretched, oven-cooked pizzas freshly made to Open: Mon-Sun 11am-11pm order. This lovely old building is divided into four cosy dining areas £17 and has achieved that wonderfully intimate ambience that is often hard to come to by. As you’d expect from a venue included in the Michelin Guide, the quality of £30 the cooking is exceptional and diners are promised a meal to remember. I began with a warm goat’s cheese saladette that was perfectly complemented by the sweetness of sherry-glazed fi gs and honeyed walnuts. Meanwhile, my companion enjoyed satisfying and warming parsnip, celeriac and apple soup. My companion’s beef and venison pie, simmered in Port and red wine, was phenomenally rich and gamey. I savoured the fresh and delicate fl avours of perfectly cooked pan-fried sea bass, topped with tiger prawns and served on Food Served: Tues-Sat a bed of creamy kale risotto. We noon-2.30pm, 6.30pm-9pm; rounded off our meal with an Sun noon-3.30pm exquisite crème brûlée, served with rum-laced black cherries and buttery shortbread, and an irresistible blackberry and apple crumble served with double-cream custard. All courses on the menu are beautifully presented and reasonably priced but for even better value look out for the ‘lunch for less’ and ‘dine for less’ special offers, which combine two or three courses at a fi xed price.

Proprietor Chris Tandy is determined to put to the renovated and revamped restaurant back on the Leicestershire food map £25 through using locally sourced (but not poached) ingredients noted for fl avour and quality. Their head chef is the key to an interesting and varied menu that includes pizza at one end of the scale and fi ne dining with venison and game at the other. There is even a takeaway option. The bright, well-stocked bar located in the 16th-century part of the building is welcoming, as is the cosy log fi re around which diners can study the extensive wine list and range of menus. The 21st-century dining room is spacious, light and airy, with seating for 80 and catering for individual Open: Tues-Sat diners or large-scale weddings and noon-2.30pm, 6pm-9.30pm; conferences. The presentation of Sun noon-4pm dishes is imaginative and sometimes quirky – crème brûlée comes to the table still fl aming dramatically, and a delicious deconstructed cheesecake arrives in a Kilner jar. My starter of crab rarebit was perfectly balanced in fl avour, with the different elements complementing each other beautifully. The accompanying homemade Béchamel sauce in particular stood up well next to the fl avour of the fi sh. My partner started with Parmesan and chorizo arancini – an unusual starter that we both thoroughly enjoyed. We continued with mains of roast rump of lamb and venison loin that were both satisfyingly rich and wholesome. For dessert, I plumped for the delicious Black Open: Weds-Sat Forest chocolate pavé while my partner savoured the rose water panna cotta. Both puddings were beautifully presented, noon-2.30pm, and demonstrated the chef’s talent 6.30pm-9.15pm; for matching fl avours. Sun noon-2.30pm In the summer months, The Attic is transformed from a snug hideaway into a breezy sun-fi lled sanctuary, with its wide rooftop terrace ideal for romantic aperitifs or informal al fresco dining. Warmed by a large log-burner, the main restaurant has a welcoming atmosphere and is £18 just the place for a delicious dinner. My thickly sliced smoked salmon starter was to generous in size, yet elegantly served with delicate slivers of pickled cucumber £28 and gherkin. My husband’s warm salad with breaded bocconcini balls proved an excellent choice. To follow, he chose juicy rib-eye steak topped with roasted cherry tomatoes, still on the vine, with plentiful sides. All meat at The White Horse comes from a local butcher and is locally farmed, meaning that it is of the highest quality; the plump, tender chicken breast was testament to this. It came served on creamy risotto with slices of mushroom and crisps of Parmesan, and was utterly delicious. Our whole experience was one of imaginative food combinations, attractively served in generous portions. Food Served: Mon-Fri The bar provides a comfortable noon-3pm, 5.30pm-9pm; spot in which to unwind while Sat 9am-11am, noon-9pm; sipping a drink from the extensive Sun 9am-11am, noon-8pm beverage menu. For anyone who wants to really relax, the restaurant has 12 en-suite bedrooms to make the most of, beautifully converted from old stables. The White Horse isn’t to be missed.

Inside, the rustic, stripped-back to decor, low lighting and soundtrack of Southern blues set the scene for the £20 mouth-watering barbecue. All of the meat is freshly smoked on-site for up to 18 hours using Grillstock’s own rubs and sauces. You can look forward to all the barbecue classics, including ribs, brisket, chicken and pulled pork, as well as burgers, rolls and an impressive range of fi xings to go with your meal. If you’re really hungry, why not try the lockjaw burger, which features two 5oz burgers, pulled pork, beef brisket and burnt ends with melted cheese and pickles? Wash it all down with a Grillstock Pale Ale – a brew concocted as the ideal barbecue accompaniment – or choose another tipple from the extensive Open: Mon-Sat 11am-11pm; drinks menu. Inside, the atmosphere is lively, bottles of Champagne line the ceiling, and to chalkboards on the wall boast hearty, seasonal specials – on our late November £25 visit, these included whole roast partridge and chunky winter soup. I started with the latter, which was lightly spiced and comforting, accompanied by generous hunks of nutty brown bread. My companion chose the gloriously gooey Camembert served with tangy red onion chutney. My duck breast in blackberry sauce was an exquisite main course. The rich meat was roasted to perfection and set alongside plump berries, tasty green beans and creamy, satisfying Dauphinoise potatoes. My partner opted for the Stilton-topped burger and was similarly impressed. We enjoyed an altogether excellent meal at Don Paddy’s and will certainly return.

I took a trip to check out the Leicester venue, which is housed in a former £18 knitwear factory. Inside, many of the building’s original features have been to £25 retained, including the steel riveted girders, huge windows, stone walls and lofty ceilings complete with authentic factory light fi ttings. A pretty courtyard-style garden with parasols and patio heaters completes the setting. Cosy Club’s property manager clearly has an eye for fi nding unique buildings in which to offer wonderful food and drink. The inviting, vintage-style decor contrasts beautifully with the industrial theme and encourages you to kick back and relax. I obliged while perusing the extensive range of dishes, and also noticed that separate children’s, vegan and gluten-free menus were available, as well as a party menu for bigger groups. I began my dining experience with the crispy avocado and prawn cocktail with tomato, cos lettuce and Marie Rose sauce. The avocado was perfectly prepared and its fl avour matched the prawns and Marie Rose sauce wonderfully. Meanwhile, my partner tucked into a squid and Spanish chorizo salad – a wonderful medley including butterbeans, leaves and creamy aioli. I was thrilled to see the comforting classic of macaroni cheese on the menu. Made with mushrooms, spinach and truffl e cheese sauce, this is no ordinary macaroni cheese – it’s a sophisticated and rich palate-pleaser. My partner chose the game Leicester Open: Sun-Weds stew, packed with venison, rabbit and pheasant, which was also a triumph. 9am-11pm; For dessert I couldn’t resist the salted caramel cheesecake, an unashamedly Thurs 9am-midnight; sweet and decadent pudding served with popcorn. My partner opted for the Fri & Sat 9am-1am cheese plate and proclaimed it one of the best he’s ever had. Stamford Open: Sun-Weds Our meal cemented an opinion that was formed almost as soon as we walked 9am-11pm; through this venue’s doors: Cosy Club is the place to go for fun, casual and Thurs-Sat 9am-12.30am high-quality dining.
