Cod Fish 160gm/ portion 2kg Extra Virgin Olive Oil 150ml Cherry Tomatoes 1kg Peeled Garlic 100g Baby Spinach 600g Whole Peeled Tomato Ciao (Can) 350g Purple Sweet Potato 500g Unsalted Butter 200g Seedless Green Grapes 100g Seedless Red Grapes 100g

METHOD STEP 1 Blend canned whole peeled tomato ciao in a blender and pour into a strainer. Slowly sauté the chopped garlic with olive oil in a pan. Add the blended tomato paste into the pan of sautéed garlic and slow cook for 30 minutes. Once the tomato paste smells fragrant and has thicken, balance the taste to your preference with salt and pepper.

STEP 2 Have the sweet potatoes boiled in a pot of salted water until cooked. Once cooked, drain the water from the pot. Mash the sweet potatoes to your desired consistency.
