NEW YEAR REFLECTIONS

As I write these few words we are once more moving into a time of further restriction in an attempt to halt the spread of Covid 19. Just a week ago the focus was on leaving 2020 behind and moving into a new year – the year of the vaccine - amid the general feeling that things would soon be better. What a difference a week makes!

Please God things will eventually get better but in the meantime we live in hope and courage in the face of hardship and loss for so many. I am reminded of the words of Psalm 23, a psalm that we are very familiar with: “Although I walk through the valley of the shadow of death, I fear no evil, for you are beside me: your rod and your staff comfort me “.

Yes, in many ways we are walking in the valley of the shadow of death; trying to work out how we got here or who is to blame are not really very helpful in the circumstances. Acknowledging that we are afraid and worried for ourselves and our loved ones is important; it brings us face to face with our reality. In this place of fear and uncertainty, the psalmist reminds us that we are not alone; that the Lord offers us comfort and consolation.

For the many ways in which we experience that comfort and encouragement, we give thanks. We give thanks too for the vaccines that are being introduced and we look forward to the day when they will be available to all who need them. We ask for the courage we need to help us to stay on track and play our part in the fight against the Coronavirus. We ask the Lord to give us the gift of knowing that He is with us and that He sustains us.

Fr. P.B. Noailles, Founder of the Holy Family Association, reminded us that “the works of God are never more solid or more fruitful than when they appear to be on the verge of ruin.” While the COVID-19 virus brought home to us how fragile we are, we must not overlook some positive actions resulting from the virus. It’s a challenge and an opportunity to appreciate our interconnectedness and our place in the natural world: there may be a danger of forgetting about others who are suffering.

Love and compassion flow from the heart: they cannot be administered. We read and hear about lovely unselfish actions. What happens when a catastrophe happens outside our own country? How do we respond, especially when there are so many demands for help here at home? What a lovely response from a group of people in Co. Meath who came forward to help people in Croatia, where many were left homeless and hungry following an earthquake. In RTE’s news bulletin (10 January), we heard that “a truck containing aid to help thousands of people impacted by an earthquake in Croatia, had left our shores.”

The turmoil of today is surely pointing to a new unfolding of God’s care for the world. “In the trials of life, you reveal your own heart: how solid it is, how merciful, how big or small.” (Pope Francis).The Church cannot remain on the side-lines in the building of a better world. Again, Pope Francis says: “I see a flow of mercy spilling out in our midst.” Referring to the sacrifices so many have made - health workers, doctors, nurses caregivers, chaplains – he invites us to “honour their witness by following the paths they have lit for us.” We must not lose hope. It has been said that the human heart can go the length of God. Our own poet, Patrick Kavanagh, said that “to be dead is to stop believing in the masterpieces we will begin tomorrow.” Let us continue to lay foundations on which we will reclaim all that was good, and journey again towards the newness of Christ. So, let us stay with the story surrounding us until, in the words of St. Peter, “the day dawns and the morning star rises in our hearts.” (1 Peter 19). Sr. Catherine Moran HFB

COTTAGE PIE

Well we all understand the impact these last few months has had on our health and our weight so lets start the new year with something healthy yet warm and nourishing for these cold days and what better than the good old cottage pie.

INGREDIENTS METHOD

450g Potatoes-peeled and chopped Boil potatoes and turnip till soft drain and mash (I use Roosters my choice) adding half the beaten egg and enough vegetable stock 450g Turnip - peeled and chopped to make a soft consistency. 1 egg - beaten Spray frying pan with low calorie cooking spray add 3-4 tbsp of vegetable stock chopped onions and diced carrots and cook for 5 Low calorie cooking spray minutes over medium heat. (I use Tesco again a personal choice) Add the beef mince and keep stirring for another 5 1 large onion -chopped minutes breaking up any lumps in the mince as it 500g lean mince (5% fat or less) begins to brown. 400g can of chopped tomatoes Stir in the tinned tomatoes the passata, Worcestershire 250g passata sauce and mustard powder then crumble in the stock 4 tbsp Worcestershire sauce cube and mixed herbs and the handful of frozen peas ltsp of mustard powder cook for 15 minutes. 1 beef stock cube Transfer your mince mixture to a medium pie dish and 2 carrots - peeled and diced spoon the potato and turnip mixture on top of mince l tsb mixed herbs roughen the top with a fork. Handful of frozen peas Bake in a preheated oven at 180 fan for 25 minutes watching to make sure it does not brown too much. Serve with steamed mixed vegetable or a side salad. Carrots mashed with turnip can also be used as a topping ( personal choice )

I have made friends with people I would never have even talked to if I wasn’t in Amadeus. You are instantly accepted into the group, and never made feel awkward or alone. I know that when I went that first night, I knew one, maybe two people, and was not looking forward to walking into a crowd of strangers. But I didn’t even get the chance to feel left out or sad. I was called over to a group of girls that I had never met before and made feel welcome and wanted! These girls were there for me and they didn’t even know who I was. Now, these girls are some of my best friends, and I have tried to be like them whenever someone new joins us, looking lost and alone. I have had plenty of people come up to me and ask me “why are you part of that cult?” or “why would you want to be part of something like that at all?” Let’s face it, to most young people, religion isn’t ‘cool’ and expressing your faith and being proud of it certainly isn’t. But that shouldn’t stop you from wanting to learn more, from wanting to be part of something bigger. Everyone believes in something, and you shouldn’t be shunned or feel bad for wanting to project those beliefs into your everyday life. Religion doesn’t have to be going to mass every Sunday, saying the same prayers repeatedly (though both of those are very important).
