tive way, paying tribute to the sport that the nation has grown to fondly identify with Kentucky. “It’s a tradition 70 years in the making,” Trebbi said upon transi- tioning the ownership. “Our secret sauce was established long ago. The ribs will be as delicious as they always were. The rye bread will be like folks remember. Our challenge is to bridge the generations and restore the prestige that loyal followers have long appreciated. We will care- fully listen to our customers and will rise to that challenge.” n

During the restoration in 2012, the new owners preserved many existing fixtures and furnishings to preserve the rich history surround- ing the property. This is best exemplified by the exposed log wall in the main dining room, showcasing the original log cabin that was used as a hunting lodge for Western & Southern executives in the early 1900s before it became Walt’s in 1942. Most recently, one of their restaurants, Bakersfield in Over-the- Rhine, was featured on Guy Fieri’s “Diners, Drive-Ins and Dives” on Food Network.
