The industrious chef is also the owner of two popular dining establishments in Bali, Teatro Gastroteque and BLANCO par Mandif. Presenting “Heirloom Tomato”, a delicate consommé starter which balances the richness of ripe heirloom tomatoes with exquisite curd and earthy almonds.

CHEF YUDHISTIRA ANGGA Executive Sous Chef, Banyan Tree Bintan Currently serving as Executive Sous Chef at Banyan Tree Bintan since 2012, Chef Angga graduated from the Hotel and Tourism Institute in Bandung (Sekolah Tinggi Pariwisata Bandung). His international career spans established brands such as Park Hyatt in Dubai, Banyan Tree in Bahrain, and Amanyara in Turks and Caicos. Presenting “Otak Otak”, an enhanced rendition of one of Indonesia’s beloved street food comprising of squid & fish terrine, sticky rice crisps and belacan aioli.

CHEF FARAH QUINN Celebrity chef & media personality Chef Farah is easily one of Indonesia’s most recognizable faces in the culinary trade with many local and international TV appearances under her belt, including the Asian Food Channel and TOP CHEF Indonesia. She has also been the brand ambassador for several travel, lifestyle and telecommunication brands. Presenting “ Iga”, a hearty beef broth with tender spare beef rib, fresh pineapples and tomatoes.

CHEF EDY RAKHMAT Executive Chef, Banyan Tree Bintan As Executive Chef of Banyan Tree Bintan since 2016, Chef Edy oversees all of Laguna Bintan’s dining establishments. He graduated from Bali’s Hotel & Tourism Academy, and holds a decorated portfolio in the culinary field with Grand Hyatt Bali, Hyatt Regency Bandung, Ritz Carlton Bali, Angsana Velavaru Maldives, Aman Jiwo and Conrad Bali. Presenting “Buntil Salmon”, featuring freshly poached salmon wrapped in spinach leaves and topped with Bintan prawns in an aromatic and sauce.

CHEF DEDY SUTAN Executive Chef, COMO Uma Canggu Named Indonesia’s Chef of the Year in 2018 by the Indonesia Chef Association, Chef Dedy has honed his diverse pastry skills with Shangri-La, The Address Dubai Mall, Raffles Jakarta, PTT Family, Pipiltin Cocoa, and now serves at the beautiful COMO Uma Canggu as the resort’s Executive Chef. Presenting “Bubur Sumsum 3.0”, an organic rice custard enhanced by the sweetness of Bali comb, bedulgul vanilla and telangis gelato.
