The Aqua Dining list draws inspiration from Davide Rebeccato’s modern Italian menu, and Aqua Dining’s location, which is quintessentially Sydney.

The wine list showcases Italian varietals grown locally in Australia and internationally.

Traditional Italian have been selected from acclaimed Italian regions to complement the Italian cuisine. There is also a focus on the finest wine regions and producers of Australia and New Zealand to reflect Aqua Dining’s iconic Sydney location.

The list also features a number of organic, biodynamic and natural wines which represent an emerging segment of the culture as well as a cellared section of wines that have been aged for a minimum of eight years.

Aqua Dining is also able to serve a number of premium wines by the glass thanks to the Coravin system. The system prevents wines from oxidising as no removal of the foil or cork is required, allowing top selection samples to be poured.

For those who have travelled through Italy and wish to reminisce or for those who wish to explore new regions, we offer you the chance to explore Piedmont, Veneto or Tuscany in more detail though the regional focus sections of the list.

6 PREMIUM WINES BY THE GLASS – CORAVIN

The Coravin System was designed in the US by Greg Lambrect. It took more than a decade of development and testing. This system prevents wine from oxidising as no removal of the foil or cork is required, which leaves the wine untouched for future enjoyment. A thin hollow needle is inserted through the cork to access the wine. The bottle is then pressurized by Argon, an inert gas that has no effect on the wine. The wine can then be poured through the needle. Finally the needle is removed and the cork reseals, protecting the wine from oxidising.

PIEDMONT: ITALIAN REGIONAL FOCUS

In Italy, only Tuscany rivals Piedmont for the greatest of its red wines. The two most highly regarded wines from Piedmont are Barolo and Barbaresco, made from the Nebbiolo grape. Piedmont is Italy’s northwestern-most region, and true to its name, which means ‘foot of the mountain’, Piedmont is surrounded by mountains on three sides. The French Alps separate Piedmont from the west; the Swiss Alps from the north, and finally the Apennines separate it from the region of Liguria to the south.

Piedmont has a continental climate; very cold winters followed by dry, hot summers - ideal growing conditions for this very fussy, difficult and infamous grape varietal.

9 VENETO: ITALIAN REGIONAL FOCUS

Veneto is Italy’s most productive region; this is due to the fertile volcanic soil that spans from the village of Soave to Lake Garda. We take a look at three fundamental wine growing classifications: Valdobbiane (Prosecco), Soave and Valpolicella.

The most popular wine of the far east of Veneto is Prosecco, made from the grape variety Glera. The wines from the Valdobbiane zone are some of the finest, driest and most sought after. Prosecco has a lot more to offer than just the fresh fruit driven sparkling wines it is renowned for.

To the north of Verona stretching from the town of Soave to Lake Garda are two important wine zones, Soave and Valpolicella. Soave, which is made from the grape variety Garganega, varies in quality due to the very fertile land and can be less than graceful at times. The classification of Soave Classico helps distinguish between the everyday table wines to the prestige wine makers of this region.

Three red grape varieties make the wines of Valpolicella. These are Corvina, Molinara and Rondinella. Similar to Soave, Valpolicella wines do vary in quality so we look towards the Valpolicella Classico classification for quality and consistency.

10 Glera

Prosecco is an Italian sparkling wine made from the grape variety named Glera, which was formerly known as Prosecco but has been changed to the formal grape variety in recent years. Prosecco is often enjoyed as an aperitif and is made in a few different sweetness levels from Brut (most dry), Extra Dry, Dry and Demi-Sec (sweetest). Unlike Champagne, Prosecco is not fermented in the bottle and is intended to be fruit driven and enjoyed young without aging.

Garganega

Soave is made from the grape varietal Garganega. This variety must make up a minimum of 70% of the wine, while the other 30% can be blended with Pinot Bianco, di Soave and Chardonnay. Soave is high in acidity and medium in body, the flavour profile is a mixture of almonds and citrus. The wine finishes with a long oily texture, that when made with care gives it just the right amount of complexity.

Corvina-Rondinella-Molinara

Valpolicella consists of the three grape varieties, Corvina, Rondinella and Molinara. These wines are light to medium bodied with high acidity, herbal notes and black fruit. Veneto is also the home of Italy’s passito tradition, where grapes are dried to concentrate their fruit. These dried grapes make the full-bodied and intensely flavoured Amarone della Valpolicella DOC. Fetching high prices, Amarone has chocolate aromas and flavours of dark rum and leather.

11 TUSCANY: ITALIAN REGIONAL FOCUS

Tuscany in central Italy is famous for landscapes, traditions, history, and of course wine. With the most famous grape variety being Sangiovese. In this section we feature the sub regions of Chianti, Morellino di Scansano, Bolgheri, Montacino and Montepulciano.

Chianti lies between Florence and Siena, but the original Chianti zone going back to 1716, now Chianti Classico, is a smaller zone within those boundaries. Chianti Classico is one of Italy’s finest wines using traditional methods with the grape variety Sangiovese.

Morellino di Scansano, lies on the Tuscan coast south west of Chianti, Morellino being the local word for Sangiovese. Further north up the coast is the sub region of Bolgheri, which has made a massive impact in recent years with the wines known as Super Tuscan. These wines upset the traditional DOCG system by using the grape varieties such as Cabernet Sauvignon, and Merlot, grape varieties that are more familiar in Bordeaux, steering away from the traditional wine styles made from Sangiovese.

Finally we visit the south east of Tuscany and the areas of Montalcino and Montepulciano, both still using traditional methods to create top quality wines.

Sangiovese

Sangiovese must make up at least 80% of the wine to be classified as Chianti, among the many other requirements within the DOCG classification. Traditional Chiantis are high in acidity and tannins with flavours of cherries and violets. These wines are mostly medium bodied, but with barrel aging and other wine making techniques can also be full bodied. Times have now changed as the aging required in oak barrels is now only two years but must have another two years of bottle age before release. Rosso di Montalcino is the newer and more entry level Brunello di Montalcino, this wine only requires one year of aging and uses the less concentrated fruit than Brunello.

There is much debate about Super Tuscans, breaking tradition and steering away from the very strict wine laws. 29 FOOD & WINE MATCHING

When it comes to food and wine matching there are general rules and guidelines but these are very subjective and come down to personal taste and preferences. Here we will look at a few of the guidelines for general direction, but we will also look for matches that spark the excitement of the palate where traditional matching rules don’t apply. Throughout the list we have noted a match with the dishes from the menu, below we will go into more detail of how the two come together. Before we get to the rules and guidelines, it is important to remember the aim of pairing wine and food, which is to enhance the dining experience.

General rules & guidelines

• Wine is much less likely to alter the flavours of food, on the other hand food can often affect the perception of wine • Keep flavours in balance – match mild foods with mild wines, rich wines with rich food • Match weight – the weight of a dish matched with the weight of the wine • Match acids with acids – the acid in wine needs to be able to keep up with the acid in food • Cleanse the palate – rich fatty dishes needs wines with good tannin structure and high acidity • Spices – hot spices need an off dry or sweeter wine • Sweetness – sweet food needs a sweeter wine

Oysters, freeze dried raspberry - NV Bellavista ‘Cuvee’ – Franciacorta DOCG Chardonnay-Pinot Noir The Cuvee is yellow with greenish highlights, the nose has notes of pear, white stone fruits and vanilla, leading to a balanced palate to finish round and soft with good length. A classic match - the chalky soils and the cool climate creates a crisp, clean and acidic sparkling wine, which compliments the oysters and the eschalot dressing due to the acidity levels.

Tuna tartare, caramelised pineapple, sorrel gel – 2013 Prunotto - Roero DOCG Arneis Straw yellow with light green reflections. Intense floral and fruity scent. Very good structure of acidity and a long after taste. The acidity of both the tuna tartare and the Arneis match in great harmony while the citrus on the middle palate highlights the citrus in the dish. The finish on the wine leaves the perfect amount of fruit and acid to match the caramelised pineapple.

King prawns, stracciatella, dill tapioca, tamarillo – 2013 Pala ‘I Fiori’ – Vermentino di Sardegna DOC Vermentino An intense persistent floral and vegetable perfume with notes of thyme and balsamic. It’s taste is predominantly vegetable notes hot and full with good depth and balance, with a long persistent aftertaste. The acidity and citrus characteristics are the key balance when matching this dish, which cuts through the cheese and matches the flavour of the prawns. The prawns are caramelised by torch so the wine needs to have a touch more body than you would normally allow for when pairing with this delicate seafood.

Veal sweetbreads, pickled kohlrabi, puffed amaranth – 2013 Castello di Luzzano – Oltrepo Pavese DOC Pinot Noir Brillant ruby red in colour with a delicate palate and a sweet scent of rose. Very finely textured and balanced with some softer red fruit such as cherries. The veal sweetbreads are delicate however it is finished with a veal jus that gives the dish a lot more weight than you would expect. The fruit and structure of this pinot marries perfectly and you are left with two complimenting flavours that last for what seems like forever. Highly recommended.

Salt baked leek, poached egg, bresaola chips, black sesame – 2013 Sergio Mottura – Orvieto DOC Trebbiano-Verdello- Grechetto-Rupeccio One of the oldest of Italy’s white wines. A clear pale yellow with natural goldern highlights, it has the fruity fragrant aromas typical of the area, with hints of wild mint and aromatic herbs. Dry but rounded with a subtle bitter aftertaste. The Orvieto has the acidity to cut through the egg with a bitter dry finish that compliments the baked leek, yet it stands up against the weight of the poached egg.

Pumpkin custard, chestnut, buckwheat, dried blueberry – 2013 Mazzei Belgvardo – Toscana IGT Sangiovese-Syrah Beautiful light cherry red in the glass and rose petals on the nose. On the palate is a poised balance of acidity, alcohol and body, and the short period in oak adds mouth feel, structure and complexity. The acidity of both the dish and the wine come together perfectly, the sangiovese cuts into the creaminess of the pumpkin and syrah gives the wine enough body to match.

Pasta

Chiken liver agnolotti, red wine, sage – 2012 Artigiano – Terre Siciliane IGT Nero d’Avola Intense ruby red with purplish highlights. Intense aroma, with red fruit, balsamic and floral hints. Warm and long lasting with an aftertaste of wood flowers. The liver adds lots of flavour to this dish, and it needs a wine to match the weight. The Nero d’Avola has the perfect weight and structure to compliment such an interesting pasta dish.

Risotto, cime di rapa, pecorino – 2013 Cielo ‘Kasaura’ – Montepulciano d’Abruzzo DOC Montepulciano Intense, dark purple fruited aromas and occasional lifts of coffee. On the palate there are flavours of ripe berries, black pepper and traces of dried herbs. A touch of vanilla, which leads to a dry and supple finish. Medium bodied, this Montepulicano has the correct weight to match this risotto without being too heavy in tannin structure. The ripe berries of the wine and the bitterness of the cime di rapa in the risotto come together in contrasting harmony.

Maccheroncini, 62 degree yolk, spinach, eggplant – 2012 Isole e Olena – Chianti Classico DOCG Sangiovese Alluring aromas of blue flower, woodland berries and spice. The juicy palate offers a core of cherry and black berry. Medium bodied with a spicy, light earth and dried cherry finish. This dish needs substantial acidity to cut through the ricotta and this Chianti delivers wonderfully. The tomato and Sangiovese are also a key combination and a classic wine and food match. The spice and earthiness of the wine matches the herbs in the pesto.

Tomato & chilli tagliolini, Moreton Bay bugs, bottarga, celeriac – 2014 Pieropan – Soave Classico DOC Garganega Aromatic, with floral notes of cherry blossom, the crisp acidity of citrus, and stonefruit and almond on the palate. This Soave has great complexity and a long, oily finish. The combination of crisp acidity and citrus compliments the tagliolini and the Moreton Bay bug, whilst the medium body and long oily finish matches the richness of the bottarga (dried mullet roe). Highly recommended.

Main Course

Ocean trout, lemon hollandaise, wasabi peas, brussel sprouts – 2012 Flaibani – Venezia Giulia IGT Pinot Grigio A delicate bouquet of honeydew melon, tropical fruit and orange flower. Flinty and mineral notes of pear, with a complex creamy texture, and hints of spice, smoke and musk. This Pinot Grigio is left on the skins during fermentation, which gives it a soft orange glow and adds to the complexity. The high acidity cuts through the hollandaise and while the body of this wine matches the weight of the ocean trout.

Blue eye trevalla, pomelo, caper leaves – 2013 Castello della Sala ‘Bramito del Cervo’ – Umbria IGT Chardonnay The wine is a brilliant yellow in colour with greenish highlights, and it’s nose features tropical fruit, particularly pineapple, along with notes of vanilla. Savoury and mineral in flavour, it is soft and balanced with lightly oaked notes, which blend harmoniously into the structure of the wine. The subtle oak in this chardonnay matches the richness of the sauce, while the crisp acidity and minerality compliments the fish.

Kurobuta pork belly, apple cutney, turnip, vincotto – 2013 Contini ‘Tonaghe’ - Cannonau di Sardegna DOC Cannonau Ruby red tending towards garnet with aging. Intense nose with a well defined vinosity and a hint of ripe plums and black berries. Good acidity with a juicy ripe plum flavour to finish. Pork belly and Cannonau are a classic pairings and this is no exception; the acidity cuts through the fat of the pork whilst the wine is delicate and does not overpower the flavour of the dish.

Beef short rib, cassava, porcini puree, white balsamic – 2009 Podere ‘Le Ripi’ – Rosso di Montalcino DOC Sangoivese Ruby red with bright garnet highlights. A penetrating bouquet of berries and cherries with a light sense of vanilla. Full bodied with a dry finish. A classic regional food and wine match in Tuscany is ‘Bistecca alla Fiorentina’ and ‘Brunello di Montalcino’. Whilst this is a slow cooked beef rib and just a Rosso di Montalcino, the acidity of the sangiovese cuts through the wagyu marbled meat while the tannin and weight stands up to the richness of the dish.

Lamb rump, date jus, Chinese cabbage, macadamia – 2012 Speri ‘La Roverina’ – Valpolicella Classico Superiore DOC Corvina-Rondinella-Molinara Ruby red in colour with spicy red fruit such as plum and cherry, a pleasing bitterish nuance and hints of almond. The Valpolicella matches the acidity, weight and flavour profiles of this dish. The spicy characteristics of the wine are a good compliment to the lamb and the plum and cherry flavours melt into the date jus.

Dessert Amedei chocolate budino, passionfruit parfait, chocolate and hazelnut crumble – 2013 Corrado Tonelli ‘Visner di Pergola’ Vino e Visciole Montepulciano-Cherry Intense ruby red in colour, characterised by its typical fruity bouquet with a clear and unmistakable hint of cherry. A sweet wine, full bodied, harmonious, with a dry aftertaste, and pleasantly bitter. Amedei chocolate has a wonderful bitterness that matches this wine. A difficult dish to match as the richness is intense, it has taken a unique Italian red grape dessert wine with Montepulciano and cherries to stand up to it; the combination of the two are as intense in flavour and richness.

Rhubarb, beetroot & chicha morada sorbet – 2013 Braida – Brachetto d’Acqui DOCG Brachetto A dessert wine among the most elegant and pleasant, it is best consumed young when it truly expresses the fragrance of the grape. Highly aromatic bouquet of Bulgarian roses and delicate red fruits. Sweet and playful, the wine displays its aromas clearly on the palate and leaves a musky, fresh and clean finish.

Yoghurt & liquorice ice cream, poached green apple, sorrel – 2012 Yalumba ‘FSW’ Botrytis Viognier A pristinely bright, clean, fresh wine with light golden colour and intense, bell-clear aromas of honey, flowers and spices, stone-fruits and generous but balanced sweetness. The botrytis viognier has the acidity to slice through the yoghurt and ice cream with sweetness to match. The flowers and spice bring together the apple and sorrel.

Banana mousse, salted caramel, caffe latte gel – 2011 David Franz Botrytis Riesling-Late Harvest Riesling Soft, light red ruby hue with a persistent, spritely foam. Highly aromatic bouquet of Bulgarian roses and delicate red fruits. Sweet and playful, this wine displays its aromas clearly on the palate and leaves a musky, fresh and clean finish. The red fruit on this delicate sparkling dessert wine is a perfect match with the banana mousse.
