BY AMERICA’S TEST KITCHEN All too often, chopped salads wind up tasting mediocre and doused in dressing. We were set on creating a simple version that was fresh and flavorful. We settled on a mix of flavors and textures, selecting cucum- ber, fennel, apples and romaine. Red onion added a bit of sharp- ness, and a modest amount of crumbled goat cheese offered a creamy textural contrast. We lightly salted the cucumber to re- move excess moisture, allowing it to drain in a colander. Poaching the chicken in a steamer basket enabled us to use no extra fat. Once the chicken cooled, we cut the breasts into chunks and combined the pieces with the other salad ingredi- ents. We decided to whisk the goat cheese into the dressing in place of some of the oil, and also found that marinating the heartier ingredients in the dressing for just five minutes before adding the romaine infused every component with flavor while still keeping it fresh and light. Use any sweet apple here, such as Fuji, Jonagold, Pink Lady, Jonathan, Macoun, or Gala.

Rethinking pasta primavera to make it taste like spring BY AMERICA’S TEST KITCHEN You’d never know that pasta prima- vera, a pseudo-Italian dish that ap- pears on virtually every chain restau- rant menu, actually has roots in French haute cuisine. The usual reproduction — a random jumble of produce tossed with noodles in a heavy, flavor-deadening cream sauce — tastes nothing like spring. Surprisingly, when we dug up the original recipe from New York’s famed Le Cirque restaurant, our colleagues found it wasn’t all that inspiring ei- ther, despite taking about 2 hours to prepare and dirtying five pans. First, the vegetables (which had been painstakingly blanched one by one) were bland. Second, the cream-, butter- and cheese-enriched sauce dulled flavor and didn’t really unify the dish. SPRING VEGETABLE PASTA boil in large saucepan. Reduce heat to medium-low, and simmer gently for 10 minutes. While broth simmers, combine mint, chives and lemon zest in bowl; set aside.
