Beef needs aging. Aging needs time. We have the biggest wine fridge & selection to enjoy this time. WHAT IS DRY AGED BEEF?

Beef aging is a process of beef preparation. The technology is simple: meat ages in a special refrigerator at a temperature of 1 to 3 degrees for 28-60 days. Due to low humidity, beef becomes fermented and loses up to 30% of its original weight.

WHAT IS THE DIFFERENCE BETWEEN USUAL MEAT AND DRY-AGED MEAT? The key effect of dry aging is the concentration and saturation of the natural flavor, as well as the tenderization of the meat texture. The longer meat agies the more intensive taste meat has. For instance, in a 36- day steak you can feel the aroma of nuts and cheese.

WHICH SIDES DOES DRY-AGED BEEF GO WITH?

Fermented beef and mutton go perfectly with vegetables, potatoes and sauces. Choose a steak to your taste and complement it with signature garnishes and homemade sauces from our chef Gerald Reichstein such as chimichurri, grain mustard sauce, barbecue and others.
