5th Annual

Greystanes Gala Dinner

CARRINGTON HOTEL, KATOOMBA 9th August, 2014

Message from Her Excellency, Dame Professor Marie Bashir AD CVO

Greystanes Gala Dinner Program 2014

As the Patron of Greystanes Disability Services, I am delighted to send greetings and best wishes to all the guests of the annual Greystanes Gala Dinner.

Greystanes Disability Services is an established and well-respected service provider with a long history in the Blue Mountains. Over the years, Greystanes has evolved and grown, and now provides a range of excellent and innovative services to people with disabilities. Indeed, it serves greater and beyond with its seating and positioning enterprise, Megalong Positioning Service (MPS).

This splendid organisation is dedicated to providing person-centred service delivery and supporting people with disabilities to live full, happy, meaningful and dignified lives in their community. Greystanes also links with educational institutions and other organisations to develop resources and to provide best practice services. For example, Greystanes’ partnership with the University of Technology, Sydney’s Centre for Autonomous Systems is focused on the design and development of a range of innovative devices, intended to enhance the independence of people with disabilities.

This is an example of The Australian Spirit in practice.

I warmly congratulate all involved in bringing together this event tonight, especially Greystanes’ loyal sponsors and supporters. I hope that everyone will have a wonderful evening while supporting this worthy organisation.

My best wishes are with you all.

Professor Dame Marie R Bashir AD CVO Governor of New South Wales Welcome We have been so humbled this year by the great generosity of our community. In the past twelve months, when bushfires directly affected not only some of our staff and families, but many of you, Greystanes still received great support at our Golf Day and generous donations from individuals. We value the commitment our community has to Greystanes Disability Services and to the important work the service provides to people with disability and their families. Many thanks to our loyal sponsors. Da-Mell Air-Conditioning and Heating are again our Gold Sponsors for tonight’s event, along with a new supporter, The Carrington Hotel. This is our first Gala Dinner at the Carrington and we are thankful to Mark Jarvis and Michael Brischetto for making this beautiful venue available to us and working with us to ensure that this night is a successful fundraiser for Greystanes Disability Services. Many thanks to our Silver Sponsors, Blue Eco Homes, Freedom Access Vehicles and Freedom Motors and Resort and Spa, who again are supporting us this year. Once again, is supporting us as a Bronze Sponsor and we also have the support of Event Sponsors Bendigo Bank in Katoomba and Storage King in Lawson. Many of these sponsors also supported our Golf Day in March and we are most grateful for their consistent and willing contribution to the Greystanes Foundation’s fundraising efforts. The funds raised through this event and others held by the Greystanes Foundation go directly to supporting the programs, services and future of Greystanes Disability Services. The Greystanes Foundation is a Trust, overseen by a Board of Directors including myself, Vice-Chair Alexis Viles, Treasurer John Curry and Directors Trevor Barman, Bob Debus, Noel Hiffernan and Dr Nick Tziavaras. The Trust is charged with fundraising and investing funds in support of Greystanes Disability Services and ensuring that funds are directed to Greystanes Disability Services’ programs and services in alignment with the priorities of the organisation. The Trust secures monies raised by fundraising and ensures that fundraising dollars are overseen, optimised and directed for the benefit of people with disability. Tonight wouldn’t be possible without the support of our sponsors, the many businesses and individuals who have donated prizes for our auctions and you, for demonstrating your support by attending tonight. I wish also to thank my fellow Directors on the Greystanes Foundation Board, the Gala Dinner Subcommittee and most especially, Pam Seaborn for her wonderful support in making tonight happen, and CEO John Le Breton and his team for their hard work, energy and enthusiasm. I also wish to thank our ever-delightful MC Ray Wiles and Jason Keen from Ray White for conducting tonight’s auction. Finally, many thanks to Dr Jaime Valls Miro and the Jeffrey family for speaking tonight. Your presence here tonight means a great deal and we thank you for your support.

GALA DINNER MENU WITH MATCHED REGIONAL WINES Tasting Notes by Andrew Russell, Sommelier, The Carrington Hotel

Canapés With Windowrie Sparkling Reserve Vintage Brut Made by the largest family owned winery in Cowra, the Reserve Sparkling is bright and zesty. It’s made from 100% chardonnay and has seen no oak, so it shows lots of green orchard fruits, lemons and grapefruits on the nose, whilst the palate is fresh and racy, with loads of limey flavours, fine bubbles, brisk acidity, and a crisp, crunchy finish. It’s a natural accompaniment to canapés. THE CARRINGTON HOTEL Entrée Beetroot Carpaccio with Rocket, Persian Fetta and a Megalong Olive Oil Dressing, with Lock and Key Riesling 2014 Discover the unique ambience of the Grand Old Lady of the Blue Mountains as you step through her doors From the wonderful Moppity Vineyards that have been rated five stars for the last five years by James into another time. The Carrington has had a rich and fascinating history spanning over 125 years. Halliday, this Hilltops Riesling is fresh, dry and fragrant, packed with ripe lime, lemon zest and exotic stonefruit flavours. The citrus will act as a wonderful foil to the Persian feta and peppery Megalong olive oil. Infused Pork Belly with Scratching and Apple Sauce, with Dryridge Rosé 2013 The Blue Mountains’ own with vineyards in the Megalong Valley. Pale crimson; the fragrant bouquet has a mix of redcurrant and herb reflecting its variety, the palate well balanced and long, the finish supple and fruit forward. Pork belly usually pairs with chardonnay, but the saltiness of the crackling will bring out the wonderful red fruits of this Rosé. TIMELESS ELEGANCE THE GRAND DINING ROOM ACCOMMODATION Main Herb Crusted Rack of Lamb, Polenta and Spiced Eggplant finished with a Minted Glaze, with Montrose Stony Creek Chardonnay 2012 The legendary Stony Creek Chardonnay is now made by Robert Oatley. Built on a core of minerality and intense citrus fruit, the wine is supported by a creamy vanillin texture derived from fermentation and maturation in fine grained French oak. This Chardonnay will complement the fresh lemon juice in the Beurre Blanc, with the richness and weight of palate matching the salmon and caviar. Grilled Atlantic Salmon served with Fondant Potatoes, Caviar and Asparagus Salsa with Beurre Blanc, with Charles Sturt Cabernet Merlot 2008 BAROQUE NIGHTCLUB CARRINGTON CELLARS & DELI SALOON & BEER GARDEN A classic aged red from the Central Ranges and made at the University in Wagga. The first winemaker at Charles Sturt was Brian Croser who later went on to fame at Petaluma. The nose has blackcurrant supported by spicy notes. The palate shows sweet blackcurrant and blackberry flavours underpinned by well-integrated oak and a long finish with fine, velvety tannins. Cabernet has long been a perfect match for lamb and the extra age on this wine will further enhance this dish.

Dessert White Chocolate Mousse, Choc Walnut Brownie, and Chocolate Torte Toffee Apple Sundae with Honeycomb and Caramel Ice-Cream With Lord Carrington’s Disreputable Rum Cask Port. Sourced from a well respected winery in Mudgee, this tawny port has been matured in old rum casks giving the final product a beautiful soft rum and raisin finish. Both of the desserts tonight are too sweet to match with a traditional late harvest sticky, as the OLD CITY BANK CHAMPAGNE CHARLIE’S RENAISSANCE SPA general rule is that the wine has to be sweeter than the dessert. The rich and rummy port will stand BAR & BRASSERIE COCKTAIL BAR AT THE CARRINGTON up to a toffee apple and chocolate assault! The theme of this evening’s Gala Dinner is Innovations and Assistive Technology. Assistive technologies are devices created for people with disability and are designed to promote greater independence. Tonight, we will be fundraising for assistive technology for communications through our Pledge Balloons. These technologies include iPads, iPad communications apps, switches and micro controllers and specialist communication support. Greystanes supports new innovations through its social enterprise, Megalong Positioning Service (MPS), which recently installed a robot at its manufacturing site to increase the accuracy and speed of its production of customised seating and positioning inserts for people with disability. Greystanes also has an innovative partnership with the Centre for Autonomous Systems (CAS) at the University of Technology, Sydney (UTS) where Greystanes and UTS collaborate on research projects for the benefit of people with disability. The CAS team is focused on the integration of mechanical, electrical and electronics engineering and computer systems in order to research and develop beneficial applications. Among the research projects being trialled at Greystanes is a “smart wheelchair” which autonomously follows a person or another wheelchair. The CAS team are also working on a cart that can follow a wheelchair as well as an intelligent hoist to make the lifting of people safer while protecting the dignity to the person. Guest Speakers Dr Jaime Valls Miro Jaime received his B.Eng. and M.Eng. in Computer Science (Systems Engineering) from the Valencia Polytechnic University (UPV), Valencia (Spain), in 1990 and 1993 respectively. He received his Ph.D. from Middlesex University, London (UK) in 1998. His thesis examined the use of full dynamics for trajectory planning and optimal control of industrial manipulators. Currently, he is an Associate Professor at the Centre for Autonomous Systems at UTS. Before joining UTS in 2004, he worked for five years as a software and control systems analyst for a London-based company designing ROVs (remotely operated underwater vehicles). His areas of interest span understanding and modelling sensor behaviours for perception and action, computational Intelligence in human-robot interaction - particularly advocating for the use of machine learning tools with a special focus on Assistive Robotics, and mapping and planning in unstructured environments. He is a Committee Member and regular reviewer at the top international robotics conferences and journals. He is also sporadically approached by the general Australian media to comment on robotics-related news and for participation in the dissemination of robotic sciences for a wider audience (SMH, ABC’s New Inventors, ABC radio, Channel 10’s Totally Wild, Channel 9, Channel 7, SBS News). Greystanes greatly values its partnership with the CAS team and is very pleased that Jaime could be here tonight to speak on this innovative partnership. Steve and Joanne Jeffery Steve and Joanne Jeffery are the proud parents of Scott, Rebekah and Daniel. Scott lives in a community home and receives support from Greystanes Community Living, Rebekah is 19 and is currently studying for a Bachelor of Social Work at University of Western Sydney. Daniel, who is 24, studied at University of Western Sydney and completed a Bachelor of Sport and Exercise Science degree prior to starting work in the summer camps both here and the States as an All Sports Coach. The Jeffery family have the loving support of a large extended family and they enjoy playing sport and watching the “Big Cats” (Panthers and Tigers) play footy. The Jefferys strongly believe that everyone deserves a good life and are speaking tonight about how Scott’s good life is supported by Greystanes. Order of Proceedings
