The most frequently used version of this age- old ingredient in our tasting room is the Rich Demerara Syrup. This is a basic, bare-bones recipe that is useful for cocktail-making and experimenting. The word “rich” refers to the 2-to-1 ratio of sugar to water. so, remember, a little of this syrup will go a long way.

INFUSION SYRUPS

Infusions can be made with just about anything flavorful or aromatic. , , herbs, and spices are the most commonly used ingredients in our infusions.

An herbal infusion is made by extracting flavors from herbs using hot water (very similar to making tea). and infusions are made similarly but require more straining. For example, here are two of our most frequently- used infusions.

POUR THE HONEY INTO A HEAT-SAFE BOWL, THEN POUR 1 CUP OF BOILING WATER INTO THE BOWL AND STIR UNTIL COMBINED. ALLOW COOLING TO ROOM TEMPERATURE BEFORE STORING. GRAPEFRUIT SODA

SQUEEZE GRAPEFRUITS TO PRODUCE 100 GRAMS OF JUICE. COMBINE JUICE WITH 100 GRAMS OF WATER AND SIMPLE SYRUP. RICH DEMERARA
