4. Place chicken, cooking sherry and mushrooms into pot. Add salt and red pep- per. Simmer until flavors have melded. The longer this cooks, the more intense the flavor. It’s even better if it’s made a day ahead and chilled before reheating. Serve this thick meal in a bowl. Grate some fresh parmesan cheese over it just For as low as before you serve. Great with a crusty baguette, and a glass of wine.
