Dashi: our delectable stock is made fresh daily w & bonito fish, this is the quintessential element in all fine Japanese noodle dishes & the vast culinary tract of Japanese cookery. Noodle bars are judged by their dashi or ramen stock. nowadays, many restaurants rely on packet versions which are tasty & consistent, but heavily salted & enhanced by m.s.g

Vegetarian Stock: we use the flavours of leeks, carrots, onions, soy, kombu & hint of shiitake mushroom to produce a flavoursome & delicate stock

Ramen Stock: the other all important stock is made w organic beef, organically grown chicken or fish bones, depending on the dish you order
