DAME’S COLLECTION: While there is no official definition for ; we have our set of guidelines: all of our selections are farmed and vinified organically, use native yeast, and there are no additions of artificial additives.

We’ve gone all in on natural wine because we believe in celebrating farmers and other stewards of the land who work tirelessly to create biodiverse landscapes. Great wine is a transmitter of a certain place and time in history: if made with nothing but , a bottle has the ability to tell us what the soil in the is composed of, what the weather was like in a given , and what the surrounding flora and fauna are doing. Cover it up with any number of 60-plus legal chemical additives, and what are you left with? Something engineered that no longer transmits its story.

The winemakers represented on these pages make wine from their core; with dedication and integrity for the land they farm. We are delighted to share the and the stories of folks whose hearts lay in the same vein as our own. These producers represent some of the world’s most unique and rare heritage varietals.

A NEW DOMAINE LABET: 4th generation grower and winemaker, Julien Labet, had, for many years made wine separately from his family’s estate. Domaine Labet remained in his father’s stead, while Julien started his own label focusing on ouillé styles of white wines, something that was a departure from the history of the Jura. The two estates have now merged: Domaine Labet is run by Julien and they have seamlessly blended the tradition of sous-voile whites (nutty, oxidized, from un-topped barrels) with new-ishly popular ouillé whites (fresh, minerally, from topped-up barrels). His wines labeled ‘Fleur’ are of this new ilk. Not to be missed: Julien’s Vin Jaune, a heady, rich, intensely oxidized white aged 6 years in barrel sous-voile before release.

ORANGE WINE? The bottles below might be the closest representation of how wine was made over 5,000 years ago in the Republic of …what some may consider the ‘first’ wine ever produced. White grapes are left to ferment on their skins in barrels, steel vessels, or clay amphorae, lending all shades of color from golden yellow to burnt amber, as well as tannin, texture, and loads of complexity. Aromatics and flavors run the spectrum of toasted nuts, beeswax, mottled fruits, and farmhouse cider. They are a little wink at history and tremendous food wines.

GUIDED BY NATURE: HIYU/SMOCKSHOP: It is with great pleasure we highlight the wines of Nate Ready. Hiyu Wine Farm focuses on permaculture and biodynamic practices just outside of Hood River, within the Colombia River Gorge AVA. The methods and intention at the farm are some of the most thoughtful work we have ever seen. They tend vines, raise animals, garden, cook, and make wine to reveal an experience of place. The property is 30 acres with vines planted in silt loam over basalt on a southeast facing hillside above the Hood River. Their site lies just 22 miles from the summit of Mt. Hood and the wines are shaped by the weather from the mountain.

Smockshop Band is the exploration of extremely special and unique vineyards off the estate but within the Columbia River Gorge by the team at Hiyu. They are able to explore and highlight incredibly diverse places under the Smockshop Band label.

We are drawn to the supreme natural beauty of the area and firmly believe that it corresponds to the characteristics in the wine. We encourage you to share a bottle or two and see for yourself the tone, depth, and vibrance within these wines.

I Vigneri di Salvo Foti: Talk about being one with nature; this man speaks volumes when it comes to working in harmony with the land. Since 1981 Salvo has been farming the volcanic soils on majestic Mt. Etna, working with vines over 100 years old! With care and respect for local traditions and the ancient grapes of the island, his work is extremely admirable. His wines sing of the mountain terrior, equally ripe and delicate. Enjoy!
