Ochre Wine List October 2017 Wine Following on from the dedication of the restaurant in supporting local, native and Australian grown produce, and holding firm from the pressure to at least include one New Zealand Sauvignon Blanc, this list is and has always been, exclusively Australian. It includes some classic varieties that have had limited attention in Australia, such as Tempranillo and Barbera, others such as Grenache which have been around for a long time but are undergoing a revival. Here you will no doubt recognise some names that are institutions of the Australian wine industry, but you will also discover some emerging and boutique wines that have a very limited retail distribution and are incredibly hard to find. Elements like potassium in combination with grape properties will influence the final colour. 4 1.     Amaranthus cruentus L. Red Amaranth (Amaranthus chlorostachys, Amaranthus hybridus subsp. cruentus, Amaranthus paniculatus) • This Central American species is alternately known Achita, African Spinach, Bledo, Blood Amaranth, Bush Greens, Caterpillar Amaranth, Princess Feather; Purple Amaranth, Red Shank, or Sudan Spinach; the moderately coarse textured plants typically mature at 3N to 5N (6N) with a spread of about a quarter to third of the height; leaves vary in color from yellow-green, medium green, dark green, to bronzish green depending upon the cultivar and nutritional status; leaves are simple, nar- rowly to broadly ovate; bases are acute to cuneate with tips acute to acuminate and with wavy mar- gins; the erect flower panicles are 4O to 8O long and fairly dense, varying from creamy white to blood red in color depending upon the cultivar and mature in late spring to summer depending on sowing times and regional conditions. • While this species is grown for agronomic purposes in many regions of the world, ornamental culti- vars are selected for the showy flower and fruit panicles; primary uses are as tall bedding plants to add height to island plantings or mixed boarders, or for cut flowers; the showy panicles can be very striking as cut flowers and are long lasting features as individual panicles go in the garden; after the initial flowering, plants can be deadheaded to encourage return bloom with mixed success. • The most popular of these taxa is 'Autumn Palette' which offers a of long showy panicles in autumn colors ranging from creamy white, buff, peach, deep apricot, to orange-red; 'Marvel Bronze' has wine-red panicles with darker green leaves that are flushed bronze; while touted as disease and pest resistant in many regions, flea beetles may caused severe damage to the foliage; although this is detrimental to its use as a massing or tall bedding plant, the foliar damage usually occurred late enough in the season that the late spring to summer flowers still matured sufficiently for use in fresh cut or dried arrangements.

Comprised of the Chablis, Côte d’Or, Côte Chalonnaise, Mâconnais and Beaujolais regions, Burgundy occupies a long and narrow stretch of vineyards in eastern France. The critical effect of terroir in Burgundy is expressed in its complex classification system. • Vineyards are divided into separate appellations along terroir France boundaries; the full range of classification levels from broadest to the most distinguished follows: District (e.g. Beaujolais or Chablis), Village (e.g. Pommard), Premier Cru (e.g. Pommard les Rugiens) and Grands Cru (e.g. Clos Vougeot). • As a result of Burgundy’s rules of inheritance, vineyard ownership is quite fragmented, with multiple owners for most crus.     THE COLOUR OF RED WINE MARIA JOSEPHINE BIRSE THE UNIVERSITY OF ADELAIDE School of Agriculture, Food & Wine Faculty of Sciences A THESIS SUBMITTED FOR THE FULFILMENT OF THE REQUIREMENTS FOR THE DEGREE OF DOCTOR OF PHILOSOPHY APRIL 2007 i Abstract The behaviour of pigments in red wine, namely anthocyanins and anthocyanin- derived pigments, was investigated at natural wine pH, at low pH and after addition of SO 2, namely SO 2 bleaching. An examination of current literature demonstrated absences in wine pigment research. Firstly, few researchers have published the colour properties of a particular wine pigment at different pH values and post-SO 2 bleaching. This was demonstrated using the CIELab colours of two individual anthocyanin-derived wine pigments (4-vinylcatechol and 4-vinylsyringol adducts to malvidin 3-glucoside), and an anthocyanin, malvidin 3-glucoside. The colours of the anthocyanin-derived pigments and their resistance to pH change and SO 2 bleaching were compared to malvidin 3-glucoside which was affected by media. Generally, in the literature, wine pigments are characterized as individual components. But many pigments contribute to wine colour. So, two novel methods were created and demonstrated using red wines: Shiraz wines from four regions in Australia, and Cabernet Sauvignon wines made using two different strains, Saccharomyces cerevisiae (SC) or Saccharomyces bayanus (SB). The first method can be used to determine the CIELab colour of chromatographically separated wine pigments and allows their colours to be re-created, regardless of their identity. Thus objective measurement of pigment colour at its natural concentration in wine is now possible. An additional method, the “post-column adjustment method” to pH-adjust and SO 2 bleach HPLC-separated wine pigments was created.

    Argentum 2017 Argentum 2017 1 Introduction Last year, Argentum posed a question to artists and art enthusiasts about the definition of design. This year, the magazine shows artists exploring their own creativity through a variety of mediums and subjects. How one sees the world can be how one creates. Artists submitting work to Argentum explored how to take an idea and form it into something recognizable or relatable to others, yet with their own touches added to it. Design has many elements and many tools that bring an idea to life. For some who are more comfortable with a brush, they use strokes and a pallet of colors to bring a scene to life. Others prefer to be more hands-on and enjoy molding shapes from clay or fashioning a necklace with a variety of beads. Some find joy in using words to create characters and describe ideas that evoke memories, thoughts and feelings. Then there are those who use a camera to show the world their perspective of a moment in time. In the end, the design of something has an impact on others. It is communication between two people who may not meet face-to-face. The effect may be subtle or dramatic; making someone smile or calling them to action; stirring the soul or challenging others to up the ante. This year, veterans of the United States Armed Forces found their voice in design, through writing, painting and photography. Through art, they’ve designed something that was born from an idea, and with some effort, became a tangible object.
